I really love the dark shiny and matte glazing on the first plate. It is really beautiful! I feel like you can make any dish look so pretty on it.🥰 I envision something like three little devilled quail eggs with some bright green sprouted beans on top, and garnished with cute dots of mayonaise around the little nest. Very Easter and simple.

Well, usually you go for 5+ course menus so eating 5 full plates would be too much to eat. It is more about the tasting experience than trying to get your nutrients. Additionally, which I think is obvious, the ingredients are more rare and the preparation requires more time than a regular dish.

Around 19:00, the server explained the side of Main on the square dish Wagyu tonkatsu was pretty weird. Wagyu means beef, tonkatsu means deep fried pork in bread crumbs. Obviously, no Japanese speaker there. Haha. Looks delicious and great anyway. Thanks.
