Sushi may be Japan's most popular food.
There are all kinds of sushi -- high end to cheap, high-tech conveyor belt sushi to supermarket and convenient store sushi. There's nigiri, maki, gunkan, narezushi, temaki ...
It's all pretty good and each offers a unique experience, but add this one to the list.
Micro Sushi
The sliver of fish is rested on a 1/3rd sized grain of rice. My guess is that it's 1/300th the size of normal sushi since the rice is only 30% the size of 1 full grain! It requires special chopsticks to position it and a real challenge for any sushi chef.
There's a reason why Chef Yuki Sugeta created Micro Sushi 30 years ago -- and that reason is one I didn't consider!

Micro Sushi here is served for entertainment only - it’s free, and the chef can’t make it when the shop is busy. If he does make it, it’s a special moment! Best to come early, around 5pm. The shop is popular so call ahead and reserve if you’d like to eat at Takasago. Why does it exist? The chef explains. It’s because ... he wants to make his youngest customers happy 😃 started 30 years ago. It’s a very nice story! Yuki has won awards for his creativity and both agreed, sushi is supposed to be fun 🍣 what do you think?

I think this micro sushi is a beautiful work of art. Yuki Sugeta San displays great skill and accuracy to create this special style of sushi. His story about how he started this idea 30 years ago to make children try fish and get them interested in sushi was so sweet and thoughtful. I'm really thankful you made this episode, John. It's great to see stories such as this and become aware and informed about these special hidden local treasures.👍🇯🇵❤

My goodness John, this is definitely something you'd only find in Japan. When I first started watching this, I was like what in the world? Why would anyone buy this or eat this? But the fact the chef did this to originally accommodate children is wonderful. The customer service and thoughtfulness in Japan never seizes to amaze me. Great video John!

I was amazed and fascinated by everything in this video: the skill it takes to make micro-sushi and to pick it up with hashi (chopsticks); the reason the chef created it; but my favorite part was the "flower sushi", they are truly works of art. P.S. I also liked the sushi clock on the wall.
