DUBAI, UNITED ARAB EMIRATES - Welcome to Dubai, and tonight we’re going to eat at Amaseena (www.ritzcarlto...) which is a wonderful Middle Eastern food buffet in Dubai! Among the many dishes they make, one of their secret specialties is a 1 meter kofta kebab that Chef Tawfeek makes himself!
First, we took a full tour of the buffet with Chef Tawfeek. Originally from Syria, he’s been living in Dubai and cooking his home and family recipes as well as a host of dishes from the Middle East. The mezze cold salads section was impressive with an array of hummus and baba ganoush, and a full array of delicious vegetables and dips.
The hot section was equally as impressive with a rotating menu of different dishes from Moroccan lamb neck to Lebanese fish in tahini. And then you have the full grill station which covers Middle Eastern and Mediterranean bbq - the lamb chops were insanely tasty, but the tastiest of them all was the 1 meter long spicy kofta kebab - a specialty of Syria and Lebanon. What I love so much about kofta kebab is that it’s not just the meat, but it includes so much extra spices and ingredients like pine nuts, parsley and allspice.

Hey mark - just a suggestion to you if u dont mind Whenever restaurents or chef host you with so many dishes on the table , just ask them for an empty plate in which you can serve various dishes in small quantity so that rest of the dish remains pure and can be served to someone else or doesnt thrown in dustbin

I appreciated that Mark corrected the chef regarding musakhan. Very odd he would say it is Jordanian. It is very classic Palestinian (unlike other dishes that are common to many Arab countries, musakhan is exclusive to Palestinian cuisine).

One of my favorite videos, amazing quality, presentation, variety. I have always wanted to travel to Dubai, after watching this video, Dubai and Amaseena (our evenings) are a must travel destination for me. The chicken and sumac dish with onions/Mesghan, is a very ethnic Palestinian dish. Many Palestinians have a great deal of influence on Jordanian cuisine/dishes; due to the Zionost/Israel occupation of Palestine, many Palestinians fled the war to the neighboring country of Jordan. In fact the Palestinians are the majority in Jordan, that's why you see so many cuisines from Palestine in Jordan. Jordan is only well known for their Mansif, which is lamb over rice and kishk/a type of thick yogurt. Palestine, Syria, and Lebanon, almost share the same cuisine, except for some unique dishes from certain regions like the Mesghan. The food is incredible because the chef is Syrian. By the way Amaseena in Arabic, translates to "Our Evenings". Oh my God the ambiance of the restaurant and the amazing Arabic music...

Had the chance to eat at Amaseena on January 20, 2023. I was so impressed by the personal touch of Chef Tufiq and our server, Jackson. Chef Tufiq took the time to explain how each of the gourmet dishes were prepared, making the experience so rich in art of food making and cultural history and personable. If restaurant means restoration, his personal touch at Amaseena makes the experience even more meaningful. The food was superb and the services were unmatched in a to-die for ambiance. I would recommend this restaurant highly for anyone who wants to experience Syrian gourmet dishes from a chef who understands the meaning of restoring the soul through food and human kindness.
