Surely the primary purpose of a midsole is to provide additional cushioning (and support in some athletic shoes) ? Plus provide structural integrity in a GYW shoe with a glued on outsole, the stitched on midsole making it easier to remove the old outsole. If you wanted a shoe to look more substantial wouldn't a double leather/Dainite sole prove more effective as well as increasing the sole longevity? There's a lot of GYW and blake stitched traditionally made footwear that now uses EVA based out-soles (Vibram V-lite 9108, XL ultralight soles. Live Tech soles). Even from premium manufacturers like Cheaney, Trickers, and Crockett and Jones. Some of these also have midsoles. Are these midsoles also EVA foam or do they use traditional rubber or leather midsoles ?

You're absolutely spot on 👍 Double leather is leather top sole and leather mid sole, which is what most stout shoes have. Trickers midsole is slightly thicker, but it's not really a double sole. EVA soles can have either but most use micro foam rubber..

what about how we'll feel when walking while wearing a pair of shoes without a midsole? for example, tricker's has some lightweight models of bourton that's advertised as such "The lightweight version has the classic construction but sees the removal of the through or midsole - the result once complete has traditional country appeal without the weight." do you think we'll be feeling all the little bumps and stones more without a midsole? or will the dainite outsole be substantial enough to take care of that?
