You can go ahead and grind your fat and mix it thoroughly with the lean then grind it once again with the meat that eay it gets mixed better when you grind it all after adding the spice then you change plates to the stuffing and add the horn and go for it

I like hog casings but unless you are making a lot of sausage you will wayst usually over half of your casings if you buy cologne casings they are dry and you only wet the ones you need and the test will last as long as you keep them dry and clean it took me four years to use one box of cologene casingsand i didn't loose hardlyonly a few that i over estimated
