Actually, it is yes to both. Your voice can change as you age, or it may not change a lot. It can also vary a little as people change the position from where one focus the voice to go to(anyone who works with the voice understands what I mean, I hope), and from experience, I can tell you it happens, as I often made my voice sound more nasally years ago and now I unconsciously make my voice sound less so. There are people whose voices don't really change, though, or the change is too minimal to be perceived. On the other hand, smoking, drinking, overusing and abusing your voice will definitely make it change. There are things that singers should avoid consuming, especially before a performance like alcohol (particularly things like rum, vodka...), citric juices, hot drinks or anything that could irritate the throat. Of course, the voice can recover over time, or it might not and you have to get used to it (there are singers who sound very sexy when they have a slightly course voice, but that's my own opinion).
