Looks great!! I would call that more of a focaccia than Pizza but who cares about details 🤣 Looks amazing and I'm going to try this. I've made 100% hydration dough before to make bread and it was delicious.

I wouldn’t suggest making round pizzas hydrated at 100% unless you’re a professional pizzaiolo and know how to manage high hydration doughs.

Inspired by Ian Spampatti? I don't know how Ian does it without oiling his work surface. I tried Ian's method a couple times and ended up with a sticky mess that I had to throw away. I was trying to do it by hand and wasn't working it long enough. I have been using Anna 00 flour but it doesn't state the protein content. I think it's an all purpose flour. What protein content is required for this hydration?

@@MileZeroKitchen i have struck out with 5 recipes was hoping you had tried before. i have a grandaugher who can’t have wheat, eggs or milk so it’s tough. all the recipes i have tried come out dense.
