Thanks Kyle! It says Mise en Place. It's French for "everything in its place" and it is the ethos of the professional kitchen. It means you have all your prep ready for the day, all your utensils, plates, tools, towels, etc. It means you have your head on straight, are aware of how busy its going to be, and have a "plan B" if you are short staffed or if a key piece of equipment is down. It is the ethos of the kitchen.
