Thanks to all the workers who do this and the Milk Means More for making such an informative video! I've been seriously putting away some cottage cheese here lately and I really enjoy it. I find that it keeps me from getting hungry and gives me great energy too! Also it seems like my muscles have become more dense, possible due to the high Lysine content, but I'm just guessing. Legendary World's Strongest Man Žydrūnas Savickas says that Curds are a keystone in his pre-competiton meal!

They did mention it, but he did not explain it very well and it's hard to understand without seeing it. I do this job. Basically, once the cheese skim milk has become firm after 5 hrs, we cut the cheese with "knives". These knives are a mesh wiring. The wires are vertical on one knife and they're horizontal on the other one. We attach them to that mechanism that you saw going back and forth across the vat in the video, and let the knives move across the vat both ways. Then we use another mesh wire knife to cross cut side to side by hand, which requires 2 people. This cutting process is what forms the curd balls. 45 min after cutting it, we start cooking.

The other day I tried the new Daisy brand fruit cup cottage cheese. The first bite, I knew it was strange. The curds felt strange on my tongue. I took it to my sink and washed some in a strainer. Wow. The curds looked like tiny marrshmallows, all uniform and perfect. This told me that they were either PROGRAMMED to form themselves that way, or they were somehow MOLDED into that shape. Knowing that so many manufactureres are now putting the horrific nanotech in OUR FOODS, I tried to contact them, but it was after hrs. I left a message and just got a return call, three days later..they said they CUT the cheese into that shape, and I personally think they are lying. I asked if they had any videos, showing how they make it and they said that was proprietary. I was thinking, yea, right. I looked up nano is cottage cheese, and Daisy was a brand it has been found in. We need to find out WHAT COS ARE DOING THIS AND BAN THEM ENTIRELY! What do you know abt the making of Daisy brand? Anyone know?
