It is unbeatable i would walk a thousand miles today just for one of her fluffy dumping sadly she passed away a long time ago . when i married and left home whenever i was making a stew i would drive to her house pick her up and made her make me a dish of them then while they began cooking i had just enough time to drive her back to her house and drive back home and enjoy my (her) dumplings, now with the knowledge that we were very poor i look back and think geez I was lucky to have my mam she never ever complained about about money to my mammy in heaven bless you and may you rest in the arms of Jesus next to my dad,and my recently passed beloved husband of 53 years

As someone who lives in an Asian country it's sad it isn't easy to get beef shins or bone marrow in the UK. I once saw a video of UK butchers who have said offal became unpopular with the mass market over the years and its only fancy restaurants that buy them now

New subscriber. Delighted to have discovered your channel. My dear Mum used to make mince with dumplings (not cheese dumplings, but i had no complaints!) and it was my favourite childhood meal. You made such a good point that the best British meals come from thrift. Hot pot, Irish Stew (yes I know, not British!) Savoury mince on toast, (even the Spencer children apparently had mince with veggies for lunch most days) bangers and mash. So look forwarding to checking out your “back catalogue” so to speak!

I followed this recipe almost exactly. I had no suet so I used half vegetable shortening and half butter. , everything else I did the same. I didn't try it as I'm pescatarian but my daughter said that she would happily eat this dish every day. Thank you so much.

Some years ago, there was a Mensa convention in Sydney. Mensa, as you know, is an organisation for people who have an IQ of 140 or higher. Did you see Heston’s recipe for a bacon sarnie? The ketchup, mustard and mayonnaise sauce. Three pieces of bacon dark and three pieces half cooked. And one piece of bread toasted and one not toasted?!?!? Laughable. He said it was all about the texture. Left me shaking my head. I totally agree, leave the jems alone. We cannot improve on what is amazing as is.

dont knock it till you try it, i over cooked my steaky bacon by mistake then cooked more and then thought instead of putting it in the bin i would add it to the fresh bacon, omg heaven please give it a try, but dont worry about his sauce .

I've learned through making many mistakes, and also out of love and desire to eat nice food without having to rely on someone else. Rick stein was a huge influence early on, and one of the few tv chefs I could watch endlessly. Mainly because he's a great cook and orator, but also he's not shouting at a chicken breast in a sweaty restaurant kitchen 🤣

Scottish mince tatties and doughballs is simple. Mince onion carrots oxo cube bisto powder lee and perrins salt and pepper. Suet doughballs with garlic and parsley No garlic or tomato based stuff in mince. Served with mash and peas.

It looked like a oxo stock cube put in water, which i did. I just followed your recipe to the T i did not want to change it. Why would you want to? If i did i would be looking for a recipe that had all the extras you wanted to put in to start with. OMG the left overs tasted even better. Although i ran out of dumpling but had it on toast. I always add Worcestershire and a good splodge of ketchup. It gives it another layer of flavor with a ketchup ketchup has spices in it what can very much help with another layer of flavor as long as you're not adding a cup full! ;-)

14 years ago I lived 200 yards from the Fat Duck [Hestons Bloominhell's place] Back then he charged £85 for a set meal which included such "delights" as egg and bacon ice cream and snail porridge. Not my idea of good food. If Heston had serves minced beef with cheddar dumplings I might have gone but to justify £85 he would have added truffles and Napolean Brandy and completely F**KED it up. 😅 Mince was always what mum served up at the end of the month when the money was running out. When I got older I added baked beans or some frozen mixed veg and mild curry powder. Still cheap especially if it's in the bargain bin at the supermarket

Hi Jane. You could slow cook this, maybe for 4-5 hours on low. Add dumplings for the last 45 mins ish. I also have a savoury mince recipe on the channel with crispy new potatoes 😊

Perfect comfort food.. Had a little taste of it as I put the remains in the fridge. You can leave the wine out if you want to. Just add a touch more stock 🙂
