I do so love your "mini" batch/portion videos, they are just perfect for 2 (or 3 people). Also, the fact you use grams is always appreciated (as an English lady, that's what I know and understand). My own recipe for shortbread is pretty similar but I am going to try your recipe tomorrow as a "Pepsi challenge". Thanks so much and keep up the good work. Best wishes, as always x P.S. Hi Sandi 🙂 I hope you do ! - and try it without a mixer like I did, you just don't need it, and that means less clean up too. Make sure your butter is really soft, leave it out overnight if possible. Hi Beth, yup you can, baking time will drop drastically. In the 6x6 pan they are very thick, like ones you would find in a bakery. Anyway, yes, 8x8 is great too. I should do this exact recipe again in an 8x8 tin. Thanks so much for watching Beth ! 🙂

Being in Canada, which butter do you use for shortbread? We don't have Kerrygold in canada so what is a comparable option?
