📌 INGREDIENTS
• 2.5 kg potatoes
• 250 g smoked bacon
• 200 ml heavy cream (30% fat)
• 200 g cheese
• 3 eggs
• 2 bunches of parsley
• Salt and pepper to taste
📌 INSTRUCTIONS
• Preheat the oven to 180°C (350°F).
• Grate the cheese using a large grater and set aside.
• Peel the potatoes, cut them in half, and boil them in salted water until soft, as if for mashed potatoes.
• Meanwhile, finely chop the bacon and fry it until crispy, or to your liking.
• Once the potatoes are cooked, drain the water and add them to the bacon. Pour in the heavy cream and lightly mash the potatoes to create a chunky mashed potato consistency.
• Season with salt and pepper to taste, and allow the mixture to cool slightly.
• Add the eggs, grated cheese, and chopped parsley to the potato mixture.
• Form individual portions using round molds (you can use the bottom of a cut plastic cup).
• Sprinkle the remaining cheese on top of each portion.
• Place the portions on a baking tray lined with parchment paper, ensuring there’s at least a 2 cm gap between them.
• Bake in the preheated oven for 12-15 minutes, or until the portions are nicely browned.
