I love Mint Choc Chip ice cream and YOU KNOW I love to transform things I love into cupcakes! This was one of my very first attempts back in the day and it is STILL a winner!
Recipe -
For the cupcakes...
140g plain flour, sifted
185g caster sugar
30g cocoa powder
40g chocolate chips
1/2 tsp bicarbonate of soda
1/4 tsp salt
125g buttermilk
120ml cold coffee
100ml vegetable oil
1 large free range egg
1/4 tsp peppermint extract
For the buttercreams...
150g soft unsalted butter
340g icing sugar, sifted
3 tbsp milk
1/4 tsp peppermint extract
75g melted and cooled dark chocolate
green food colouring
chocolate sprinkles (optional)

After years of stubbornness using an ice cream scoop, I finally tried filling my cupcake tins using your two spoon method. What a revelation! It made filling the tins so easy, not messy and it was simple to see and adjust how much batter was in each cup. Thank you for making cupcakes even more fun!

I fully understand using a neutral oil in baking (just for consistency sake), but olive oil is absolutely gorgeous in chocolate cakes!

I make the chocolate cupcake recipe lots and as a person who hates coffee I can vouch for Jemma this recipe has no coffee flavour at all. It makes a lovely, rich and moist chocolate cake. X

Mint Choc! My favorite flavor combo of all time aside from chocolate and peanut butter!! Jemma, where do you get your spatulas? They look incredibly easy to clean and they also look like they do an exceptional job of scraping bowls (unfortunately, not all spatulas are equal in this way!)!

When I eat cocoa nibs I always notice that they have that cooling minty affect. I think mint and chocolate work so well together because your enhancing qualities that are in the chocolate anyway... Maybe 😂

How come some batters are thin and some are thicker. When do you know its just right & not to thin or thick if making a new recipe? Do you have a certain ratio of ingredients when coming up with new recipes? Im always afraid im going to make hockey pucks for cupcakes if i dont use someone else's recipe! Lol What do you suggest?

Jemma, thank you for this lovely recipe. Just to clarify, does the 75g of melted dark chocolate refer to 75g of solid dark choc that is then melted, or 75grams’ worth of already melted dark choc? The way it is written presupposes the latter and not the former, but just needed to double check

Do you use a fan-assisted oven? When you open the door of your oven, it does sound like it. The temperature would be different for someone who has a "normal" oven (like I do) and I just want to make sure to make the right adjustment.
