How to use Sichuan pepper! In this video I'm introducing the three products you can get from the Sichuan pepper tree: the leaves, the shell and the peppercorns. They all have different usages and they are not just limited to cooking spicy foods.
My mother-in-law and I introduce they way it's used here in our village. Apart from cooking, you can also use it as body wash, hair wash, for foot baths, for tea, for making bread, to press it for oil, and for decorations.
There is one usage I did not add to the video (due to sound problems) and that's for hair wash. My mother-in-law tells how Sichuan pepper water is often used by women who has just given birth, to prevent hair loss (which is common after giving birth).

Great video. I'm a north American homesteader who has been raising my family offroad in the Venezuelan andes for over a decade. I often aquire new plants from abroad. Even after staying a couple of years in Chengdu and being exposed everyday to Sichuan peppercorns, I did learn a few things about Sichuan peppercorns usage that I didn’t know or expected with your video. For me, Sichuan dishes are disproportionately parts of the best food I had in my life.

I'm Chinese-American. I'd known about Sichuan peppers from some Chinatown dishes that are not from Southern China. I live in Brooklyn my whole life, and in the month of February and in early March, I discovered some "advanced" dishes in Flushing, especially in the food courts. Including stuff from Wuhan and the Uyghur people. I would have continued commuting there weekly, but the Coronavirus lockdown put it all on pause. I discovered Sichuan peppercorn oil for the first time, to be used in noodle soup dishes. It's incredible and I will look for it more deeply in Chinese supermarkets one day. I say all this to express my only-recent understanding of the power of huajiao. And I haven't watched your video yet, but I hope you enjoy your continual cultural exploration in China.

I use it to boil in water and use a towel to soak warm mixture to cover my knees to get rid of rheumatism. To soak the feet too!!! I definitely love it, for food too

My Mom was Sichun native , I love the Sichun dishes very very much combined with red hot peppers, 我喜愛那個麻辣味,其它省份如湖南、廣西等等只是辣不麻! Thank you foryour production . I remembered once, perhaps twenty some years ago U.S. boycotted these peppers imported from China , because it contains 麻的作用!

I am very glad you find Sichuan pepper. It is indeed treasure as your mother in-law described. Soaking feet in pepper water is really good for health. Especially if you have a cold or wet feet. It works like a charm.

Nice info you provided here, when u said you use them on fried potatoes i opened my bag and placed a handful in a baggie, pounded with a wooden mallet and added sea salt to sprinkle on tater tots from an air frier, great advice, tastes even more complex than garlic parmesan or truffle fries, its going to raise in popularity as a seasoned salt because the complexity of smells and tongue numbing novelty it has i predict.

i need to try adding sichuan peppers to footbath, and i'd suggest you can add ginger to your footbath, which is what we do in Hangzhou, especially on very humid cold winter days. our temperature is a lot milder, but the humidity and wind makes it really numbingly cold. we also use the used ginger (smacked flat) wrapped in warm wet towels to wrap around our legs while soaking. the ginger's heat sticks around for many hours afterwards. my mother is a big fan of this as she's always feeling cold.

Thank you for this educational and entertaining video. When I was young growing up in Taiwan, my grandparents used sichuan peppercorn in a lot of their cooking. The month numbing sensation was truly unique. I love to see your mother in law's sourdough bread.

In central China . People put the corn seed together with the shell in the oil , then fry with vegetables It became crunchy and full of rich aroma . Always my favorite

I would love it if you made a video how you make the Youtiao with Sichuan Peppercorns. I googled it, but could not find anything nor any recipes making the 'doughnut' or bread like the one you show in this video.

In rural Serian ,Sarawak ,East Malaysia we use 3 types of herbs a type of wild orchid called Gambier Sarawak , pinang fruit ( 嬪朗), a type of bushy leaves green on top/ red at the bottom + a pcs rock salt : pounded into a paste to treat diabetes boils & no name boils. Applied to wound with bandage 10 days will sew the healing of the stubborn wounds. For gambier ,can substitue for sichuan pepper for numbing the pains , for green/red leaves pasty juice can substitute with aloevera.

Oddly enough, they're not even closely related to either chilies or pepper. They're actually closer to citrus fruits, belonging to the same taxonomic family - rutaceae.
