Spinach Recipe, Rural Chinese Style

FIND THE SPINACH RECIPE BELOW. Here's our spinach recipe, rural Chinese style! I have never cooked spinach like this until I came to China, but now that I've tried I love it. For two reasons. 1. It's absolutely delicious, just so, so tasty. 2. It's also super simple and easy to make!
INGREDIENTS:
Spinach
Spring onion (optional)
Garlic
Ground Ginger
Salt
Chili flakes
Rapeseed oil (or other cooking oil)
Brown vinegar
1. Wash the spinach and the onion, and boil for a minute or two until soft. In the mean time, chop the garlic.
2. Squeeze out the left-over water from the spinach and chop it. Put in a bowl that can stand heat.
3. Add chopped garlic, salt, chili and ground ginger on top of the spinach.
4. Heat up some cooking oil and pour it over the spinach (watch out so you don't get burnt!)
5. Pur over some vinegar and mix well. Ready to eat!

Happy belated birthday Miriam. The noodles recipe is simple but looks delicious. I cook in a similar way for either other green leafy vegetables or bean sprouts. Just boil very quickly to ensure that the vegetables or bean sprouts are still crunchy. Cut the leaves at about 2cm long. Put then on a plate. The fry some chopped garlic and or thinly sliced shallots. Pour the golden fried garlic /& shallots with the oil over the vegetables or bean sprouts. Sprinkle some soy sauce and white pepper if you which. Hope you give it a try. Enjoy!

TY for the recipe! I tried it with some tender radish greens (cause I prefer that to spinach) and it was wonderful. I used a olive oil since I didn't have some of that rape seed oil like you have. I have never tried it like this before since as a rule in the southern US states...we cook the greens quite a long while with seasoning. Not sure this would work with Lambsquarter...and that is my favorite weed/green of all times. But it worked with radish greens and I was surprised it was not tough at all despite fact the greens were fairly large with the radish bulb not quite fully grown. I had home grown shitake mushroom sauted removed to a bowl...then added some oil to pan with seasonings and poured it onto the coarsely chopped greens. Who would have thought a bowl of saute mushrooms and wilted greens would be a perfect meal?

I have made a little similar spinach side dish but after boiling the spinach I add fresh ginger, a little bit soy sauce and a little more vinegar (salt and sugar optional, depending on the taste). I don't add hot oil, but I can imagine hot oil makes all the spices to have even richer flavour. Once again, happy birthday and welcome to the 30's club 😉
