I’ve been looking and looking for a legit baladí bread recipe, I have been watching your videos since you started many years ago when I was still single. I am Japanese🇯🇵 Bolivian 🇧🇴 and for some reason I took an interest to Egyptian cuisine. Forward years to now and I’m married to an Egyptian 🇪🇬 Alhamdullilah and so happy 🥰 I had the pleasure to visit beautiful Egypt 🇪🇬 and finally tasted the famous baladi and it was amazing. My family is Egyptian.When I visited my aunt and uncle in Alexandria,they used to get the bread warm,some guy delivered it fresh to their home,right before mealtime.I remember how good it tasted just by itself,with butter,cheese or homemade jam!!!

Thank you for this video, it was my starting point to master it at home. One thing I accidentally found to be efficient is add 200 grams of greek yogurt to 4:3 wholewheat to white flour ratio, and found that the bread comes out elastic a little, it does not rip when filled with stuff, and blows up so evenly and beautifully on the stove.

We say both. To be completely honest, when i started saying this at the end of my videos the same time i started to watching a ton of Lebanese and Syrian soap operas. i guess subconsciously it came out naturally since they say more "se7a wa afia" rather than bel hana wa el shefa 🙈🙈😂😂😂 Mixing cultures but that's ok 🤣 But some Egyptians say it as well

But my Arabic is not the greatest ... it's just very difficult and the stuff I learn ... can't really be used in public I'm told 🤣. Joking aside - I made your "Aish Balady" and it was a success 👌. I just have to make it a bit thinner next time. Now I'll have to alternate between making Swiss bread and Aish Balady - but that's very much OK with me. Actually,...Egypt is the only Arab country that call's bread "Aish" meaning "life" or "survival". The other's call it "Khoubs".There is another type of Egyptian that uses an agent to make the bread rise which is the ancient Egyptian bread. Its thicker and has a crunchy outside..:)….just so you all know...I'm Ghazawi/Sinawi

Wheat flour has weat in it, bread flour is white flour with higher protein content. If u don't have bread flour u can use white flour instead it just comes out better with the bread flour

It depends on tge way you roll it. Probably the ones that didn't rise are rolled too thick or too thin. Also if u leave it too long on the pan on the stove then the top and the bottom will stick together and it will be hard for it to rise under the broiler

Make sure that the yeast you are using is still good. Always proof the yeast before using it to make sure it is good. 3 things can prevent the dough from rising. 1- bad yeast 2- water too hot it kills the yeast 3- water too cold it doesn't activate it.

Before u start put a tbsp of the yeast with warm water and tsp sugar mix and wait for it to bubble up. It usually takes 5-10 min for the yeast to be fragrant and poof up. Good luck. Let me know how it goes 😊

One side is very fluffy, while the other side of the pocket is paper thin (yet together). Wondering how to get a more even sides of the pockets. Also why no flipping?

You are welcome 😊 I think it might have to do with how you roll the bread. Maybe it's thinner on one side more than the other. Try to use a guide while rolling and leave it a bit longer to proof after rolling

No flipping because I'm trying to replicate how they actually make it fe el forn el balady. They use an oven that have heat all over which helps the bread to rise evenly. You can make the whole thing on the stove and flip it but then the chance of it puffing decrease. And the color the bread gets from the direct flame of the broiler replicates the real deal which makes it 100 times better 😁😁

The broiler doesn't have a temp. It's usually either high ir low. Set the flame to be on the highest level

+aichanorway bread flour is regular flour but have a higher level of gluten in it you can use regular white flour instead and if you have gluten separately you can add a tablespoon if you don't have access you can use just the regular white flour but kneed it for longer time to develop the gluten in the white flour 😊

It's different than the ancient one. This is a more modern (hundreds of years old) version. The ancient Egyptian bread is more similar to the sourdough bread

You baked half time on the pan and finished it in the oven or I choose where to bake?

the best way to make it is put it on the pan until you see the bubbles then move to the oven under the broiler. this will give you the best results exactly like the authentic bread we have in Egypt. but you can if you want to finish the baking on the stove top. once you see the bubbles turn it on the other side it will puff up then turn it one more time leave for 10 seconds and it will be done. the taste will not change weather you make it on the stove top or the oven. only the look of the bread itself :D

Why is there is so much checking in Egypt...so so much monitoring...people were decent...but not on main Street ones, but that's understandable since they were the say greedy ones everywhere it's like that in the world... But monitoring, checking... If this increases, it will be like what heard of North Korea
