I'd love to see you take a look at a few of the recipes from the Fate series! The cooking spin off manga "Today's Menu for the Emiya Family" has cookbook pages breaking up the chapters that are all about the different characters cooking for each other. It would be really cool to see you make some of them!

I think the main reason the Pikobi eggs had a better filling texture was because they went for a much softer boil than the Regova eggs. They went for a yolk that was still a little wet, moreso than the half-boil ramen egg but much less than the Regova style. This led to a much softer yolk that made for a very homogenous texture, compared to the much firmer yolks of the Regova. I also would prefer the Pikobi style, plus its got a more Asian flavor style and I'm always a sucker for that.

i think i know what went wrong with the mayo(emulsauce), generally when doing mayo emulsion you slowly raise the immersion blender and pour in the oil super slowly the oil looked poured in a bit too fast and the blender not moving enough

If you can't find red salt you could put white salt in a Ziplock bag with 1-2 drops of red food coloring and shake it up.
