Ingredients (Makes 6 rotis):
1 cup whole wheat flour (atta)
½ cup gram flour (besan)
½ teaspoon carom seeds (ajwain)
½ teaspoon cumin seeds (jeera)
½ teaspoon turmeric powder (haldi)
½ teaspoon red chili powder (lal mirch)
½ teaspoon garam masala
½ teaspoon salt (or to taste)
1 tablespoon chopped coriander leaves (optional)
1 teaspoon chopped green chilies (optional)
2 tablespoons finely chopped onions (optional)
1 tablespoon curd (for softness)
1 tablespoon oil or ghee (for kneading)
Water (as needed, for kneading)
Ghee or butter (for cooking)
Instructions:
1. Prepare the Dough
In a mixing bowl, combine whole wheat flour, gram flour, ajwain, jeera, turmeric, red chili powder, garam masala, and salt.
Add chopped onions, green chilies, and coriander leaves (if using).
Add curd and oil, then mix everything well.
Gradually add water and knead into a soft, smooth dough. Cover and let it rest for 15-20 minutes.
2. Roll the Roti
Divide the dough into equal portions and shape them into balls.
Roll out each ball into a medium-thick roti using a rolling pin. Dust with flour if needed.
3. Cook the Roti
Heat a tawa (griddle) on medium heat.
Place the rolled-out roti on the hot tawa and cook for 30-40 seconds until bubbles appear.
Flip and cook the other side for 30 seconds.
Apply ghee or butter and cook until both sides have golden brown spots.
Remove from heat and repeat with the remaining dough.
Serving Suggestions:
Serve hot with curd, butter, pickle, or dal.
Enjoy with a side of lassi or chaas for a traditional Punjabi meal.
