They look really good, but they don't look done yet. I'm gonna try cooking them for the first time next week. I haven't eaten chitlins in around 5 years when I was at my mother's house, and I miss them. I bought a 10 lbs. bucket for myself today, and I'm going to cook them the way this female did on another video that I saw on here. She used olive oil and a little butter to sautee the onions and garlic. Then she added chicken broth and seasonings and boiled the chitlins. It's not the way my mother cooks them, but it looked amazing. I can imagine how delicious and flavorful those chitlins tasted after being boiled in chicken broth.

MS Da'thy, Thank you. I was born lived in the Mississippi delta (Drew/Ruleville) prior to moving to Memphis, and then onward around the world. My mom parboiled her chitlins, but then floured and deep fried them. We put ketchup and or hot sauce on them and ate with greens, peas/beans and cornbread with fresh onion, lettuce and radish. We washed it down WI t h cold clabbered buttermilk or iced tea. Oh so good!

I'm glad I came by here to learn a few more tricks on Chitlins because My Brother and Myself are about to shoot a video cookin' chitlins over a camp fire...and what better way to get a few extra tips than to see a real Mississippian do it Mississippi Style...we too are from Mississippi and live in Mississippi...and now I am really tired of typing Mississippi...lol. I hope you get the time to check out our crazy adventure...Two White Boys trying to cook Soul Food over a camp fire...in this one adventure...but we did cook Escargot...Snails in a can because we felt like being French for some reason...lol.

She cooked them 3hrs total. She cooked them a hr the first time washed n rinse . N second round 2hrs.

She said 2 hours to clean. Then cook for 1 hr, pour off the grease, then season and cook till done for her, a total of 3 hrs for her 10 lbs. I usually cook on a slow boil for 4 hrs, after I have soaked and cleaned them in vinegar water. Using celery and the 1 hr par-boiling and pouring off the grease and fresh clean 4 cups of water with 1 bouillon cube per pound of chitterlings, there is hardly any distinctive chitterling odor. Potatoes on top will not only take away odor but will also take away the taste of the chitterlings.

I see how black folks be going to the Hispanic bodegas to order our rice and beans with chicken and saying our food is good af. And the bodega food isn’t as good as home cooked because they skimp a bit on the seasoning to save money. LOL

I start with a total soaking in water and vinger, then Removed the membrane aka the Lining, next while pulling excess fat off( discard lining and excess fat or any thing that shouldn't be there waste, straw ect)and soaked in a tabpoon baking soda and water the first wash, then 3 to 4 more salt water wash & then a plain water rinse each time till clean

Yeah you don’t cook chitlins that way. It doesn’t need a lot of complicated seasonings. Yes black people love seasoned food but chitlins is a southern dish that doesn’t require adobo or Sazon

I don't drain mine, I let it cook down, what's the difference because the chitterlings going to be greasy anyhow. unless you going rinse them off with water. Pouring water out off of the chitlins not doing any good for them when they still greasy away. I'm just saying, and everybody do it different.

boiling them and draining the excess water/fat off...does remove most of the grease.....but leaving a little fat while cooking them makes them taste better......

Grandma Dathy chitlings is one thing my granny made, it is an aquired taste. Just like brains and eggs. Which I don't eat/cook either because it just seemed barbaric to me. However, that's a better way to prepare them you're right, they always need more cleaning. Thank you for pointing that out.
