Looks like she had a rough ball and then carefully pulled it in half. Then she carefully squished the two halves back together but with part that used to be in the middle now facing up

I brown my butter let it cool before making the dough once the dough is done I refrigerate for at least 3 hrs before cooking

Genius. And those cookies look like perfection. Great texture. Perfectly toasted. This is why I cook and don't bake. Cooking is more forgiving I think of the 2.. baking is the one that takes some talent not just skill.

Not sure what you are saying may be a mistake. Personally i feel they are too big. Too big for children. Too big for me, a senior. I wish serves were a smaller sizes. This applies to many bakery foods and please know I mean no insult, clearly they are beautifully made with love and quality ingredients. We eat with our eyes but its too much sugar, too much everything..
