I cook them whole (skin pierced) at 400 F for 45-60 minutes, depending on size. The high heat breaks down the tough fibers, so the interiors are as smooth and creamy as a soufflé.

There's no point in piercing the skin. Freeze them for 1-2 hours, then cook at 450F for 90-120 minutes.

So you said sweet potatoes can last notoriously ( complete malapropism) long, then you go on to say they only last a month, well that's BS. its another amazing food item, sweet potatoes can be traced back to 750bc in Peru, but it takes modern day Americans to tell us and the rest of the world how were storing, preping, cooking and eating them wrong. Bla bla bla

Yes my father would grow sweet potatoes on our homestead and to keep them in the back of home at the beginning of the rows of garden he would dig holes and put the sweet potatoes in the holes, cover with pine straw and then cover dirt on top of that. (Called Banks) I remember every time we needed potatoes my mom would say go to the bank and get some potatoes. 😊😊. How I miss those days. Thanks for sharing. Peace and Love ❤️

My two cents to speeding up the cooking process: Poke a few times with a fork, pop in the microwave for a couple of min. (depending on the size) before cooking in the oven. Cuts the cooking time in half and doesn’t effect the flavor! 😁😁

I have sweet potatoes for breakfast every morning. I peal off their skin with a knife and then wash them before I put them in the rice cooker. It just takes around 20 minutes to boil them thoroughly in it. Easy and simple. As a big fan of cheese, I like to put a slice of cheese on top of sweet potatoes before eating. The sweet potatoes melts the cheese in the same way as the burger does it. What a delicious and healthy meal!

I learned this from a NY Times article. Freeze the sweets for about 45 minutes, then bake at 375 until the skin gets paper-y. Don't poke holes ! The ice crystals will melt, creating steam inside the potato. Soft, fluffy, the best texture. 👍🏻

You aren't lying about too much sugar. I love sweet potatoes baked plain, and just with butter. I eat it like a baked potato and eat the skin. Sweet potato casserole is horrible. Usually canned sweet potatoes are used, which already have had sugar added, then lots of sugar added to that. It's not a vegetable at that point, it's a dessert, like pudding.

One large sweet potato .. wash well, pierce well, microwave directly on turntable 9 min +/_ depending on microwave and size of potato, split and serve with butter or other quality fat in order to get full benefit of fat-soluble vitamins, and perhaps a little black pepper for added flavor and to aid digestion. Consume entire potato with skin for greatest nutritional benefit. (same with white baked potato). Two people may share one large potato while a second potato cooks. I have never tried cooking more than one large potato at a time in microwave; but two small to medium might work just fine. As for running regular oven for potato, I would only consider when using oven for something else at same time, such as meatloaf or chicken. I never used to eat the sweet potato skin but, after learning so much nutrition is LOST by not eating skin, I learned to eat potato skin and love it and since would not dream of wasting so much as a bite :)

Back years ago, when you baked a sweet potato some of the sweet juice would actually run out of the potato. The potato was actually sweet! The ones today are a far cry from the old varities. You have to add butter, cinnamon, sugar or whatever to liven the up a bit. Todays commercially grown vegetables pretty much suck. Problem is that most folks who grew up without a gardening background in these later years don't realize what has been lost in the new plant varites. Most of what were bred for longer shelf life or resistance to insects and so on. Flavor was not a priority.

In the U.S., none, unless you're visiting a specialty market that has true yams. What is commonly sold as a yam in the U.S. is actually just an orange sweet potato. If you do find some true yams, you are unlikely to mistake them for sweet potatoes, as they have a brown bark-like skin on them, usually have white flesh (though there are other colors), aren't the same shape, and are usually larger in size.

I make sweet potatoes for the family at Thanksgiving & Christmas. After I boil the sweet potatoes I start to peel them and there are a bunch of strings in the sweet potatos that I have to pull out. I can’t keep up with all the strings. I mash the sweet potatoes with the potato masher and it takes out some of the strings but not all. What is causing all the strings in the sweet potatoes???
@d.v.r2933
@d.v.r2933 10 ай бұрын
The 2 main reasons for this tend to be 1.) These "strings" can come from growing a potato in soil that is too fertile. The potato is a root and roots store nutrients. Grown in soil that is too fertile, sweet potato vines will grow fast and big and the result is long stringy potatoes). 2.) Sweet potatoes stored at temperatures above 60 degrees Fahrenheit will shrivel and become dry and stringy. Sweet potatoes may develop an off-flavor and the flesh may become discolored when stored at temperatures below 55 degrees Fahrenheit.

Don't use aluminum foil in the oven at all, ever. Use a stainless steel or cast iron pot with a lid. Get rid of your aluminum and teflon pans. We don't want poisins/toxins attaching to our foods. This comes from indirectly touching the food too. Fumes adhere to your food so parchment won't stop it.

Does anyone have comments about slo-cooking? I've tried it twice. The first time was a colossal failure and I had to throw out the entire pot. The second was a rousing success.

I wrap them up individually in saran wrap and they last so much longer, no more dried up sweet potato's.

sweet potatoes are not as tasty as they were when I was growing up. Must be why cooks started over doing the marshmallow casseroles

People, if you think too slow, you can slow down the speed on KZbin. This is much more effective than displaying publicly just how weak your brain is.

My take on a mistake. Applying a brown sugar glaze on sweet potatos! LIke sprinkling sugar on ice cream. Sweet potatos are by definition, SWEET! Why the glaze??

There isn't a problem with that. That is what I do all the time. Wash them properly, place on a plate and put in microwave for 6-8 minutes according to the size. You can also eat the skin. Very delicious for breakfast with scrambled eggs.

That's my question too. Nothing needed to be added. All those additives just take away the lovely flavor. Keep it natural, sweet and delicious. One of the good things about sweet potato, it is delicious for breakfast with scrambled eggs and a cup of mint tea. I cook my sweet potato in the microwave on six to eight minutes or a little more if it's big.
