Ranging from the vegetarian Kerala Sadhya to the spicy Thalassery Biriyani , Kerala is known for its rich and varied taste it offers. The one thing you find in every Kerala home will be pickles. These are spicy food items which add taste to the main course meal. Starting from Tender Mango pickles , lime , garlic, dates to prawns and other fish pickles , Malayalis make pickle out of all vegetables and even fish.
Here is a different kind of pickle from My Village Foods. This is a very simple and tasty mixed vegetable pickle. It can be served along with rice and even chapatis. For this mixed vegetable pickle, we use bitter gourd, mango and carrot. Peel the skin off from the raw mangoes and cut the mango, bitter gourd and carrot into very thin slices. Now take some green chillies and cut it into slices. Make sure that the chilly slices are longer than the mango so that one doesn't bite the green chilly unknowingly. We can also add beetroot to this pickle according to one's taste.
Cut ginger and garlic into small slices. Once the ingredients are set, take a vessel and add oil to it. Now add mustard seeds, fenugreek and curry leaves to it. Then add ginger and saute it. Add garlic, green chilly and saute it. Now add turmeric powder, red chilly powder and saute it for a while before adding the vegetables to it . First put the bitter gourd and then the carrot. Then add salt and then add the mangoes and cook the vegetables. Once the vegetables are cooked add the asafoetida powder and saute well. Mixed vegetable pickle is ready.
