Ingredients
1 cup + 1 tbsp (135g) maida
1 ¼ tsp baking powder
¾ tsp baking soda
5 tbsp (70g) soft salted butter
5 tbsp (70g) oil
1 cup minus 1 tbsp (195 - 200g) granulated sugar, coarsely ground
¾ cup yogurt
3 eggs
1 tsp vanilla extract
½ cup (50g) shredded dried coconut, coarsely ground
1 - 2 tbsp milk (if necessary)
Yellow, pink, and green colours (optional)

What,according to you, would give the best flavour-fresh/dry/dessicated coconut, if I have all 3 avlb at home?

Jyotsna, there'll be hardly any difference in the final outcome of the cake. I have made this cake with grated fresh coconut and also with shredded dry coconut and was satisfied with the results both times. But though I have yet to use desiccated coconut, in my opinion, you'll get a similar moist and tasty cake with that as well.

Thanks for your appreciation, Marylim. About the sugar, the proportion is just right. The cake is not too sweet. But if you want the cake to be less sweet, you could reduce the sugar by 10 to 20 per cent.

Hi Veena! Can I use sooji or rawa instead of flour and make it eggless?

It wouldn't be a good idea to replace both the flour and the eggs in this recipe at the same time. But if you drop just one of them, adjustments can be made to the batter ingredients. Let me explain. Coconut makes a cake heavy. The eggs play an important role in the coconut cake recipe as they make the cake light and soft. Also, coconut and rava are both granular and when they're added to any cake batter, it's even more important to have a binding agent to hold the cake together and give it a good texture. Otherwise, the cake will crumble and fall apart. In this cake, flour and eggs act as binding agents. So you can't replace both. You cannot replace all the flour with rava. But if you want to add rava to this cake, you could replace 1/3 of the flour with fine rava. The rest of the ingredients, including the eggs, will stay the same. If you want to replace the eggs, then you'll have to add around 1/2 cup of condensed milk and then maybe a few tbsp of milk to get a soft dropping consistency batter. But the content of flour will remain the same.
