Hello guys and gals!
Today we are making the most yummy Pineapple upside down cake from scratch that you will ever taste! This cake is so yummy, I can't even explain it. I wish you could taste it through the computer, but since you can't you will just have to make it!! I am going to list the ingredients below. I hope you will try this and leave a comment on how you like it!

INGREDIENTS:
-1 stick (8 tablespoons) of unsalted butter.
-1 1/2 cups brown sugar, tightly packed.
-12-13 pineapple rings (about 1 1/2 cans).
-12-13 maraschino cherries,drained (you can find these in the baking aisle of the grocery store)
-2/3 cups unsalted butter at room temperature.
-1 1/3 cups granulated sugar.
-2 teaspoons pure vanilla extract.
-4 large eggs, at room temperature.
-3 1/3 cups all-purpose flour, sifted.
-1/4 teaspoon salt (I use Kosher salt).
-4 teaspoons baking powder (NOT baking soda).
-1 1/3 cups pure pineapple juice

I like the larger cake using a 12-inch skillet. This cake is exactly how my grandmother made it clear back in the 1940's which my dad loved as a child so I requested her recipe. She too used the rich pound cake recipe using the pineapple juice to flavor. The only difference is she separated the eggs and beat the egg whites until they were fluffy with stiff peaks and would fold them into the finished batter in which the egg yolks had already been added.

I made this last night! Husband said it tasted like I've been baking like that for years, and that is so far from the truth you would have to know me to understand. If I could figure out how to post a picture here I would. Thanks for the awesome video, I followed your instructions step by step, pausing and playing and felt so confident because it looked just like yours the whole way through. I truly tried many recipes this is the most moist and delicious recipe. I will continue to keep make this cake because my whole family also loves this cake.

today's my daughter's boyfriends birthday , I just put mine in the oven . This is my 1st time ever making a pineapple upside down cake. I sure hope it turns out light & fluffy . This is his favorite cake so I'll let y'all know later hiw it turns out , cuz yours certaimly looks perfect

I tried this recipe last night and it turns out great, my husband loves it. It's a little bit sweet to my taste but I guess Pineapple Upside Down Cake is supposed to be sweet. I use a 12" skillet to bake it. One thing I would recommend is putting a tray underneath the skillet because the butter will MELT and burn the oven when the temperature gets hot!! I started the oven at 350F then after 30 mins I increase it to 375F and bake it for probably another 15-20 mins, check the cake frequently then it would be fine. 😊

To all those with the frequently asked question: "what size is the skillet"? I've asked the same question, and got no answer. I decided to make a test. I have two skillets, one is 10.25", and the other is 12". I tried to put 8 pineapple slices (like in the video) in the 10.25" pan, but could only get 6 in. When I put 8 slices in the 12" pan, they fit. I assume all pineapple slices are standard size, no matter the brand. But, even so, the size of the slices must be close.

@@simplysplendid8997 Sorry for the late reply. It's a rule of thumb that if you're putting salt in the batter, it's best NOT to use salted butter.

I just love this recipe. It takes about one hour to bake in our oven though, at least. The recipe is easy to make and tastes great. Thanks for sharing your recipe for this delicious desert. I've already baked two!

I love this recipe and will be trying it next. But as I do with all my pineapple upside side down cakes, I really enjoy it more with 2 cans of crushed pineapple instead. My hubby doesn't like the cherries so I layer on top of the brown sugar mixture pecans, yum. Can't wait to try this thanks for the video.

ok I don't know what I did but the cake was so thickkkk it was like a pineapple brick and it was like 12 inches so now I have this huge cake with the strength of a freakin nuclear reactor that I just have no idea what to do with i took two dang measly bites of this cake and I gained 500 pounds in under 0.2 seconds- I could feed the entire Soviet army with this cake- I could utterly demolish lives and leave hollows in my wake with this cake- Tastes pretty good tho not gonna lie 8.8/10 on the cake scale

Maybe you mixed it too much. Once you start adding flour, you don't keep beating it to death. Then the batter breaks down and the cake, muffins, whatever ends up tough. I usually do that part by hand.

Jaqueda Pruitt oh lord . It must be a large pan, or a Bundt pan . Has anyone ever tried a glass pan ? Yes the secret is adding the dry to wet ,just until mixed . If Over mixed,it’s a flop. Same with banana bread,muffins ok.

I made this cake just a couple weeks ago using a 10 1/2 in cast iron. I have now been asked for 2 more of the same- I went out a purchased a new 12 in cast iron. Still took 45 min. for the stick to come clean.

I'm trying this in my pressure cooker because my oven died. Most of the PC recipes I've found turned out cakes that looked wet and dense. I have no idea how to make a fluffy result. Definitely trial and error time, but I love this recipe so this is the one I'll have to start with. UPDATE: This is NOT for the pressure cooker. It turned out horrible. It still tasted good, but it was so dense, there was no crumb at all. Anyway, my oven is working again, so...

Made it once and flavor was good but a bit to dense, compacted...kind of not great by 2nd day. But I'm giving it another try tomorrow and will update. I did bake it in a 13 by 9 baking glass dish and size was perfect. Thank you!

other use condensed milk, or coco milk we jave here in Venezuela called harina pan, like flour but its a corn I don't know if I can use it.

+anabella valdez You cannot use harina. You need flour made from wheat. All Purpose Flour (USA) or Plain Flour (UK) is used to make biscuits, pastry, cakes and crepes, and in breads which do not require yeast, such as scones. Self Rising Flour (USA) /Self Raising Flour (UK) contains some baking powder and also salt. Always follow the recipe! Strong Flour or Bread Flour, is used in the making of yeast breads, but plain flour can also be used with yeast to make pizza dough. Plain flour and bread flour may both be used to thicken gravy or make a sauce with a roux. Cake Flour is for making cakes that are extra light.

Making it tonite - the Hubs is verrrry excited - his favorite cake. Update: Epic Fail! I should have known better. This is a HUGE cake recipe - it does not work In a 10" cast iron pan! In my 53 years of cooking I've never had such a mess in my oven. Black burning brown sugar lava setting off my smoke detectors and making my oven a regular dumpster fire. PLUS, the cake was raw and runny in the middle. If you're using a 10" cast iron, cut the recipe in half ....... or find another recipe - there are a zillion of them out there.

I’ve made this cake 3 times using the exact amount of ingredients as shown. The first time the cake was delicious but a bit dense (I’m using a spring form pan) and the second and third were a disaster: the cake was so dense that I had to throw them both away. Can I use one cup less of flour?

I tried this recipe. The cake with the exception of the topping was fine, especially on the first day. It did firm up a little the next day. The topping had a funny taste and was sweet, yet the pineapple was a bit tart. If I put more sugar, it will be extra sweet. I used Dole pineapple from the tin. I don't know if it is because I used the light brown sugar. I always use the Demerara sugar or white sugar when baking. I will have to see if there is a recipe where they don't melt the sugar in the butter. I have used that brand of butter to bake my cakes many times. I did not use a frying pan because I don't have one that size. Could it be the baking tin or the light brown sugar that caused the strange taste? I had to scape off the top of the cake to eat it.

kwakoe I follow the recipe and it came out sooo dry. First of all, too much flour, second, can’t bake a cake without oil. This cake turn out to be the driest cake I’ve ever make. Sorry about the honest comment.

The beginning states 1 stick of butter but I see 2 sticks being put in the pan with the brown sugar. Did I miss something?

I just cut the stick of butter in half before placing it in the pan to melt :)

+55Herbie1 ... I was confused about the butter, too, and ended up using way too much. (Come to think about it, maybe that's why it took so long to bake?). Took every bit of 45 minutes +. According to my honey, it was still delicious. Just very, very buttery!! Have to take his word for it... I'm gluten intolerant :-(

You should use a different flour next time. Something like coconut flour is gluten free, I think. Look it up, there's plenty of choices. Why should you live without cake?
