Claire, I waited a few weeks to make this because I wanted to have my brother try it when he came to visit (I didn't think I could eat a whole cake by myself before it went stale). Now I wish I hadn't because now I have to *share* this cake, which I could for sure eat all by myself before it goes stale. One of the best cakes I've ever eaten in my life!

My mom's favorite cake is pineapple upside down. Every time she has ever made it (and she makes it how her mom made it), part of the liquid is pineapple juice and it is made in cast iron. She cooks the pineapple and sugar mixture on the stove top and pours the batter in while it is still hot on the stove! It is absolutely the best. The cake is light and airy and full of pineapple flavor. So although this one looks good, because pineapple upside down cake is always good, I don't think it could beat my mom's (and mommaw's) recipe! Sorry, Claire! Still love ya! 😉💕

Okay I know there's a delay between filming and release and you probably have everything really planned out in advance BUT if you guys could make an episode for the tomato and feta tart from Dessert Person while we're still in peak tomato season, that would be amazing!!! I'll probably make it anyway but I love having the videos to hold my hand through the process. It feels like doing a fun homework assignment somehow? Like I get to read the recipe and watch the video a bunch of times to prepare myself and then I get to try it and see how I do. So excited to have a new book full of recipes to try soon!

Claire, lemme tell ya, I consider myself a very lazy home cook. I know enough to make food taste good and interesting but I'd much rather find out first if there's a shop in the nearby 30 mile radius that sells something to satisfy a craving before ever making something at home. I hate dishes. And so I don't have that many cooking or baking books. I have the ones I like because I trust the people behind them and one of those people is you! No recipe from Dessert Person has ever failed to be delicious. From the easy ones to the hard ones and this youtube channel is just a great thing to have first and foremost for when I decide to try a another recipe from the book. Can't for this new one! Looks great.

So similar to mom's. Her pineapple upside down was always made in her cast iron chicken fryer. And that's still how we do it today. 1 maraschino cherry in each pineapple hole, but sometimes with roasted walnuts or pecans in the caramelly brown sugar mixture. Yum. And congratulations on the book! It looks great! No doubt the recipes inside are delicious!

I am excited to try this recipe! I just got all my ingredients from the grocery store. But, I live in Europe and when things are measured in cups, it makes the recipe a little harder to follow. e.g. our butter is measured in grams on the package instead of cups in north America. Maybe in the future you could include the gram equivalent somewhere in the recipe? :-)
