3 hour mark. Braise just the ribs for 3 hours in total while basting every hour, then put in the additional onions and squash

Pretty hard to get good short ribs these days. Beef is too expensive and it's an inefficient cut. Some high end butchers aren't even offering them anymore. It's one of the least cost efficient cuts there is. You could probably very easily replicate this recipe by cutting a 3-4 lb chuck roast into 2/3 large pieces instead!

I use vinegar marinades for meats all the time. Apple cider vinegar and mustard for grilled chicken but I use honey to balance
