I was about to say something slick like "if you have the money, go for it." But really, you could do a smaller version of this too. It won't be as aesthetic and pretty, but you can salad prep 10+ tupperware containers and keep them in the fridge at all times too. There are ways to make this idea work for most tax brackets honestly so good for her.

I do this on a scale for one person. Lol. I prep stuff Sunday evening and Thursday morning so it's fresh. Weekly selection varies. It saves me time and I eat better.

This family went a little out of the way for it but they're making it a regular habit. If you're still interested but on a smaller scale, you can purchase these condiment containers online and store them for easy access in the fridge! They're similar to what barkeepers use for the lemons and limes. Couple packs of those, a pack of tongs, easy peasy and not super expensive (unless you're Gucci and buy organic lol). Or, you could purchase a couple of salad choppers with the bins attached, they dice everything into one container and you just add dressing!

I did this small scale for my kuds in the 70's. A large rectangle tupperware container, full of cleaned and cut veggies, pickles, olives, etc. Each in its own section. Kids want food now. Not later. No one likes to wait. So grab and go veggies works. A dip and a drink and its done. I did the same with meats and cheeses, and then added fruits in a large basket on the counter. Start with what you have and use what you like and whats manageable. Lol. My kids also ate as they walked through the garden,tomatoes, carrots, peas, cukes. They learned to love veggies.

I love wide mouth quart and pint mason jars and the plastic lids for produce prep. They’re easy to find in many stores, easy to clean, and they’re pretty tough. I bought Rubbermaid Brilliance glass containers last year and they’re truly fantastic but I still use my mason jars, too. We live in a tiny home with a tiny fridge so I know the jars would work in a regular sized fridge. HTH.

I love the practice of getting the kids to help with the food prep. Once you have them more or less trained as sous chefs, it cuts down on prep time, increases family activities, promotes a healthy relationship wih food and important self sufficient life skills. It also nurtures their self worth and confidence. They will also treasure those memories for a lifetime and pass he traditions down to their own children.

I have just started cutting veggies, putting them in containers, and leaving them at the front of my fridge. When I open the fridge to get a snack, I see the veggies ready to go and am much more likely to grab them! Only takes about 10 minutes every 3ish days to prep.

Actually the mum of my daughter's friend did something similar on a very small scale ( as the family was smaller), she put fresh vegetables and fruits ready to eat on the table. Her kids loved it and would snack "healthy". She said it never got wasted.
