Note: Be sure that the papaya is not ripe. 1. Slice the papaya in quarters (4 slice). 2. Peel the green skin and remove the seeds and white layer. 3. Cut the papaya in thin slice (julienne cut) using knife or food grater. 4. Put salt in the grated papaya, mix well. Set aside for 10minutes. 5. Prepare ginger, turmeric, garlic, onion, chillies, carrots. Slice them in thin slices. 6. Cook the liquid part. Bring to boil a liter of vinegar in medium heat. Add 2 to 3 cups of white sugar. Stir until the sugar is dissolve. Note: the amount of liquid may depends in the amount of papaya. Also, the sourness and sweetness of it may depends in your taste. 7. Add turmeric powder, salt, bay leaves and ground pepper into the liquid. Set the fire in low. 8. Wash your papaya. And, squeeze the excess water. Repeat, again. 9. Mix your clean papaya and other clean vegetables. Put, it in a clean glass container. 10. Slowly, put your liquid in the container. Make sure that the papaya is submerge... Put the container lid and seal it. Set aside for 5 days to 1 week... Enjoy your atchara!
