Normally, Filipino dishes are sweet and salty and sometimes with a tinge of sourness that's why they are good with rice. These days though, some make it sweeter, no idea why. My tip is, if you find it sweet, you dip it with vinegar. Yup, Inasal is different. It's a style or method of cooking originated from Bacolod (Visayas). Liempo is a cut from pork belly, if I am not mistaken.

HI FR...FYI...we always incorporate sugar in OUR cooking cause in a tropical country like Philippines, you could easily loose your energy because of heat exhaution...you sweat it easily in the heat...that is why halo halo is famous as well...enjoy

I am Pinoy, but I don't eat sweet dish or sweet meat ... not my fav. I know it's not good for the health. You can find carenderia that doesn't cater sweet dish. You may suggest the owner or the chef not to put too much sugar in their dish, after all, they ask evaluation of their food and service.

I also don't know why, I think Filipino like sweet but for me just a tinge of sweet is nice. Liempo is part of the meat of pig stomach where the ribs are. If you want cook or grill them you can control the amount of sweetness. I think Chinese people sweetness too so we adapt them.

Liempo means pork belly… also not all restaurants in philippines serves sweet dishes. It depends on the restaurant but… most filipinos are used to eat and like to eat bbq or spaghetti with a touch of sweetness. But not all kinds of foods. Adobo also its yummy when it’s a bit sweet and salty at the same time with lots of soy sauce to balance the sweetness.

I agree that Pork bbq from Inasal is a bit sweeter than other BBQs... but you know we normally eat chicken Inasal with Toyomansi or soy sauce with Kalamnsi and that added sauce which is made from chicken fat(orange sauce originally made by Inasal) it will compliment and balance the sweetness taste with the soy sauce and kalamnsi, it should taste better if you eaten it that way.. which we normally do filipinos.. dip the meat to a soy sauce with kalamansi..and it lessens the sweet taste of the bbq meat.

no not at all. Like i said not all Filipinos like sweet in their cooked meat, i for one is not fond of sweet meat neither processed meat. Sweet meat dishes originally came from Batangas and Tagalog regions that is why sweet adobo was called adobong batangas or adobong tagalog. Even sweet spaghetti of jollibee is inspired by batangas way of cooking.

SUGAR is a SEASONING. It’s like SALT, SPICES (chili, pepper etc.) SAUCE (soy or fish etc.), HERBS (basil, chives, rosemary etc.) that enhances the aroma and taste of the other ingredients. Too much salt or sugar is NOT good. But then again - TOO MUCH OF EVERYTHING IS NEVER GOOD.

We use sauces to minimize sweetness. Sugar is used to replace MSG (which is 3rd level sugar cane yield). Use toyo and all meats are viand that must go with rice.
Hmmm.. thats really peculiar.... I am not sure when this trend of adding sugar to savory dishes started ..... I dont remember it being a thing that people did when I was growing up... Whaterver sweetness you taste is supposed to be from carmelizing of naturally occurring sugars in food... like sautaeeing onions and vegtables... not from adding sugar.

Sugar is supposed to be used as a spice, something to balance the sourness of vinegar. I am with you, I don’t like sweet meat as well. I think it depends on the region in the Philippines. I grew up in northern Luzon and I don’t remember eating sweet barbecue or sweet adobo.

Sisig dates back during the Spanish era in PH, and it means "to make sour." It was originally vegetarian; guava, papaya, and other vegetables squeezed with calamansi. Then during the American occupation the dish evolved to add meats from pork head to not waste food in the commissaries in Pampanga, Luzon.
