Hi. I´m from spain (it is from where jamon serrano was invented), it is a really normal thing here. It is salted and cured for months, so it doesn´t have any water left and it can´t be eaten by bacterias and go bad. We normaly eat the jamon that comes cut, because its cheaper but some families that want to spend the money buys a ham leg for Christmas holidays, and we eat tons of it in families reunions as an appetizer. and it is almost always eaten with bread, you can also make sandwiches with it alone or with cheese also.

I am from Puerto Rico and this delightful ham was offered to me during a Christmas feast. It was absolutely wonderful. I am a total Boomer (close and closest to Gen X). Even before that party, I had gone to Spain with my mom, but that was before the days when the internet was blooming. Otherwise I would had make it a point to taste it straight out of the Iberian Peninsula. This is a wonderful staple of Spanish cuisine and I admire how Momma and Josh truly went out of their comfort zone. Bravo for them!

It's a cured ham. You have it upside down. Your bib is the cover for the ham when you're done with it. Flip it over and start again. Or take it to your butcher and have them slice it up for you. Good on you, both, for stepping out of your comfort zone.

I lived in Madrid, Spain for 4 years ( I am originally from the UK). This is a speciality there. Every Christmas lots of families gift them to one another . However the difference in the flavour is all about how you slice it- if you slice it too thick , it doesn’t taste great ( it’s very salty cause it’s been cured like that) Even after 4 years , I couldn’t never get the slice right!! I had to get my roommates ( who were Spanish to do it) It has to be sliced very thin like paper- like prosciutto ham. And yes it can be kept outside of the fridge because it’s cured ( Cover it with a bug dishcloth)Try and find a Spanish person from Spain- they’ll tell you more 🥰❤️ Enjoy . It’s served as tapas all over Spain ❤️🇪🇸

What a blessing you were able to afford this and get it to your house To try. I'm a stay at home mom, my husband works out of state and he really wants to try this. It would have been a blessing to have surprised him with something like this. I would love to buy The Leftovers from you but if $200 is the cost of shipping I don't think I could swing that. Portugueses girl here. First: for the first attempt at cutting a serrano ham you did amazing. Serrano ham ( presunto) it's almost mandatory in every charcuterie board here in Portugal and Spain. It'amazing with a nice cheese or bread. From what I know it was created here, in the iberian peninsula. Here you can buy it pre sliced EVERYWHERE and there is even a Spanish Supermarket chain (Mercadona) that has people slicing the ham for you, not in a machine, with a life like you did. There diferent types of hams and the taste is different, depending on the place it comes from, the amount of time it was cured, the saltiness, ... Something you might find weird is we love serrano ham with melon (you can Google serrano ham with melon). The contrast of salt and sweet and the fresh melon 🤤🤤

The whole idear behind ham is preservation, save some for later. It was invented long before refrigeration and invented mostly because there was no refrigeration, nor sealed cans/jars/bags for that matter. That is done by a combination of treatments that first reduce water content, and second add a combination of salt, sugar and smoke to keep any microscopic critters from being able to make a living in it and spoiling in the process. I dont know for ham, but for honey the water content must be below 19% water and if so, you can store it in a pyramid, come back 3000 years later, and aside from being fully crystalized, it is still just as edible and nutritious, the same simple sugar it was when you put it there, as long as it cannot absorb more water. REAL cured ham, low moisture and salted, can most assuredly be kept without refrigeration, that is why ham was invented. That is what you have here. REAL HAM. Just keep it dry and at mild room temperature and it will hang for months in a muslin bag to keep dust and insects off it. In the US most prefer a moister texture, too moist to keep without refrigeration. No, technically ham is not cooked, it is cured. The stuff we get in grocery stores these days is made with sodium and/or potassium nitrates instead of simple sodium chloride salt cause it is cheaper and quicker to be ready to sell. Con Agra does not want to have to maintain a warehouse full of pork while waiting months for it to cure properly, and lose the majority of the pork weight as the water evaporated. inject it full of match heads and water, put it in a sealed bag, and let it soak in while it is on the truck to the store is what all the artificially cheap ham really is. They dont lose poundage that way, in fact the pork gains weight by injecting a bunch of mostly water they can still sell at a premium pork price. Most Americans now prefer the flavor of nitrate treated meat, it is what they have come to expect. Dont leave a tub of Pepperidge farm ham out on the counter, it is too wet, and will spoil. They shouldnt even be able to call most of the stuff being sold as ham in the US as ham. How bout simulated ham pork product? Also to consider is that before curing, that pork weighed a lot more, so your now partially dehydrated pork, weighs a lot less, so you are really getting a lot more meat for your money than with an injected industrial "ham" I guess if you find a Parma ham unappetizing, ya prolly better dont look at how REAL sausage like pepperoni or salami or even premium hot links are made. Try this, go get yourself a pack of Oscar My Ear salami and some real aged salami from the deli counter and drag race them see how that comes out. Not the same stuff. Few would eat a whole pound of OM Cotto Salami, the real stuff it's hard to stop eating it before a pound. While you are exploring real food, try out canned, vinegar pickled cabbage labelled as saurkraut and drag race that with real fermented saurkraut, if you can find it anywhere. It should be illegal to call pickled cabbage saurkraut, cause it aint the same thing. The label should say, pickled cabbage instead. If you cant find real saurkraut, kimchee is a different kind of cabbage and different spices but the same idea and a lot easier to find. I'm sure there is now industrially produced pseudo kimchee these days too. It has to be sterile, read that dead, or have added preservatives to sit on the shelf for 6 months. Kimchee is ready when it is ready cause it is a living, probiotic food. Go to where the customers know what it is supposed to be, who would demand a refund for fake kimchee. The real stuff cannot be sealed tight or the jars could explode. It needs to be refrigerated to stop it from going too far, too fast. Korean market if you have one. I like it a little on the ripe side when it has bubbles in it like a carbonated soft drink but that is close to the end of it's edible lifespan. Check the made on date to get it to the degree of ripeness you prefer. If you are new to it, might ought to go with a little less ripe, still a bit crunchy. Nope I dont think cholesterol from eating eggs was ever a significant health risk, eating a bunch of saltpeter and a sugar filled bowl of starch and corn syrup, HFCS (high fructose corn syrup) is the more likely culprit to declining health in the US. Some may remember in the 1980's they encouraged all of us to avoid fat, especially the kinds ALL of our ancestors ate prior to the early 1900's, you have to eat the soybean/cottonseed/canola oil instead of lard. McDonald's was universally recognized as the best french fries to be found, until they switched from beef tallow to fry them in to vegetable oils, now their fries are meh like everyone else's. So the whole food industry shifted to a LOT more sugar to try and make the HoHo's appetizing without lard or tallow. Well, here we are 45 years later, was getting rid of the ancestral dietary fats and shifting to a LOT more sugar and simple carbs that rapidly become sugar good advice? Were there fewer people with heart disease and diabetes when everybody ate bacon or ham and eggs for breakfast every day, or after we all switched to Froot Loops?

Wtf did you makl and who did you use. I mail stuff all over the country everyday and for ten lbs with those locations can be sent overnight by FedEx or ups for $20 or about 15 bucks standard mail at the post office.

@g_willow i used UPS. The box was exactly 10 lbs. I have no idea why it was so much. This was at Christmas time. I don't know if that matters. I will pay more attention next time. I think if I wanted it there overnight, it was over 200. That's just crazy too.

Well almost Jamon Serrano is drJerry. With salt for like 2 to 4 years so all the moistures gone and it won't spoil while prosciutto uses a different type of salt and cures for 1 to 2 years and uses a different curing process than Jamon thats why prosciutto melts in your mouth and Jamon is like ham jerky.

Heads up: Jamón (Wikipedia) "Once the external fat layers are removed and the meat is exposed, the product must be consumed as soon as possible since a progressive drying and deteriorating process starts. This is not an issue for restaurateurs and retailers, since they go through product much faster than an individual Home users will typically choose sliced product, be it freshly cut from a deli stand, commercially pre-packaged or vacuum preserved. Jamón is safe to consume as long as the leg is kept in a dry and cool environment and out of direct sunlight, but it must be kept refrigerated once cut away from the leg."

200 is cheap, here in France it is for sure more… it is a delicasie in a Spanish household, for the whole family to eat, friends, you cut very thin slices, the longer it is dried the more expensive because of the richness of the flavor, it is good for aperitif before a meal, accompanied with other things, yes it stays on the counter for months, beware of your animals but it is a cultural staple in the kitchen counter, table wherever you want to place it. Not every spanish person or French can have it, ppl settle for buying it cut up as they can afford little at a time lol, it is a lux piece, I’ll take it if you guys don’t want it😋❤ *Note: the little piece you cut off you put it back on like a lid when you are done cutting it, I have seen ppl do this, ppl wonder if it will get dirty with dust or other things or aluminum foil, or wrag on it too, plastic or multiple things, know the outer layer is made to protect it from getting dirty, that’s why you see it hanging out freely in open air when it’s drying that’s why you don’t eat that part, then in when you want to eat in like dinner, bbq, or party you pop it all off and it’s ready to prepare meals, set to eat etc, sorry Europeans take their food so seriously!😂❤🍖

Get it from Lidl in the US for $99 around Christmas. We smoked our Hams and salt cured them, the hung in the meat house for months.

@@akbychoicethere is lidl here too but I think the quality is different to a lidl ham and European Spanish ham. Even though I don’t think there is anything comparable to making at home like that❤

Take a few paper thin slices and use in place of ham for chicken cordon-blue it will be amazing. Use it in dishes where you want deep earth salty goodness but a little goes a long way

Its some of the best tasting ham. It's salt and air dried. You can cut it into pieces and freeze it and add it to greens, beans, I know I'll throw several types of dried bean in slow cooker with that ham and it taste great I've even added to split pea soup

It’s just like our southern “country ham” where it has a crust from the curing process! You can just cut the bloom (mold) off but it’s flavorful! This kinda ham is best cold on sandwiches with good cheese (not kraft singles!)

You guys should have looked up how they cut, slice this ham. It looks exactly like it should. Its got to be trimmed just right. You slice off the black looking stuff, mold looking stuff from its aging process. Its made from hogs that only eat a certain type of oak acorns and they are put through a great timely aging process. Slice the ham thin thin. I would love to get to try it myself. I bet its amazing.

Hello It’s Prosciutto We buy honeydew Mellon and rap the ham around it you get that sweet & salty taste😋it’s so good.. Some people rap around pretzel sticks.. Prosciutto in the deli is about 19 dollars a pound and is sliced very thin.. My husband & I love it 👍

It's a cured ham MoMA. Just like the old folks used to cure hams in a smokehouse. Put that bib over the ham. Now, fry you up some ham and biscuits. You eat on it all winter long. Have y'all never had country ham at Cracker barrel or any restaurant. Where do you think country ham comes from? Dang, I'll take it.

This is basically a real Country Ham , That is cut right away from the pig or hog - Mixed with Salt , Brown sugar & Alot of pepper , Rubbed all over the whole ham & jowl , and joint area then wrapped in brown meat paper - then put in a sack & hung from farmers barn jost - for at least 10 months to a year - Then they are all brought down - individually take off sack , then brown paper & twine - You then rub off all the salt, brown sugar & black pepper ( black pepper is used to keep bugs off ) After that basically 10 - 1yr You have a whole ham - but farmers usually have 20-30 hanging in farm . You cut all the moldy looking stuff off & you have a good old REAL COUNTRY HAM . U CAN LOOK UP ON UT REAL COUNTRY HAM HOW TO CURE ...... U WILL SEE YALL GOT A GREAT SPANISH HAM. BUT MILLIONS OF FARMERS IN THE US COULD OF SOLD U ONE PROBABLY ALOT CHEAPER & ESPECIALLY SINCE YOUR JOSH & MO.. BIG HUGS MRS JOSETTE TEXAS 🙏 🙏 🙏 🙏

Country ham is found everywhere in Virginia. The difference between country ham, prosciutto, and Serrano hams are the length they are cured.

I’ll have it! I had some in Spain 10 ago and I never got over how delicious it was! It’s cured uo to 2 years!!! It melts in the mouth! Have it extremely thinly sliced with cantaloupe and a nice mature brie cheese and some arugula

Is it smoked? ...i thinks its cured which means it pumped full of salt or nitrates to get all the water out so bacteria cannot grow on it...thats why you can leave it out

1974 I was in Spain ate this ham with some cheese, bread, olives, tomatoes, and lots of wine for three days, when you are really famished it is really energizing while hiking or traveling!

Thin sliced Serrano ham with any sweet melon is tha bomb! The sweet juicy melon contrasts beautifully with the salty savory ham. Also Serrano ham rolled up with cream cheese or goat cheese is fantastic!
