I find it funny that in this video 'The Birth of a Legend' with the way the impulse engines are installed is the exact same way they are removed in another video called 'The Ending is Just the Beginning' where the Enterprise underwent her 18 month refit from the keel up.

If this was an extensive refit, what did the ship look like before Kirk’s time?

We didn't get to see much of it when Captain Pike was in command, but we saw the monochromatic bridge. Pike's quarters was a heck of lot bigger than Kirk's. Various design changes and upgrades were made from Pike's to Kirk's time - Various console changes, the transporter controls were different, those gooseneck visual communicators throughout the ship. Smaller, rounded view screen. And, of course, the warp nacelles and various other physical schemes of the ship. But, it seems much of the upgrades were made after Kirk took command, from the way the series portrayed it, in the proper filming order. The refit for the Motion Picture was far more extreme. 😊

Canadarm very cool. When leaving space dock at about 07:19 There appears to be another Constitution class starship but with the look of a refit. What was your thinking there? Obviously this is the Enterprise fresh from construction but why a next generation vessel already present?
