Breville budget machines like the express and infuser don't come with OPV 9 bar out of the factory, only newer models do. It looks like you're brewing at 10-12 bars, consider OPV mod or pre-infusion extraction only. That could explain why there's a bit of channeling and more acidic/bitter notes in your coffee.
