if anyone comes to morocco you have to try Tajin, you'll understand that no one in masterchef, chefs included have no clue what a Tajin is, even the idea of a Tajin managed to get it wrong, you can't cook a tajin in a hurry, the idea of tajin is cooking vegetables and meat slowly with a very low heat using the air traped inside, and you get the best result by cooking it on coal with a tajin made from clay, now i saw this, if they did that to a dish i eat at least twice a week that im really familiar with, that makes me wonder, how many dishes from different cuisines they got completely wrong like that?

Couscous is not cooked that way. we never boil it we just leave it under a steaming pot or a thing we call Keskas. Also we never mix Tajine with Couscous cause couscous' vegetables are cooked in a completely different way. I really think that you shoulda at least called my mom to be with yall

@Nogs Galogs It is a Moroccan dish, so as a Moroccan, I know it much more than everyone of them including the judges. It is quite impressive that they have tried to cook something they never tasted, but what is really annoying is that the judges said that it was cooked right!!!! they shouldve at least contacted some moroccan chef to be with em, or give em tips about how to cook a tajine or couscous correctly.

My dad is Moroccan , and he was was always doing a vegetable tajine including pumpkin , it is the most delicious thing in the world , even a lion would like vegies after trying it And there is a sweet pumpkin Tajine too , and tomato would never hurt with it , so I guess it is okay The sweet pumpkin tajine with goat meet was posted in "Bohemian kitchen" Channel , you can check it out

I am Moroccan 1- this is the worst tagine I've ever seen 2-it's not how it should be plated 3- that's a disrespectful manner to present such an iconic 2 dishes, couscous and tagine are not made together. Please learn your ways or at least show them a way to make tagine and absolutely dont mix the couscous with tagines.

7:58 the couscous should NEVER be crunchy , if it is , it means that it's not ccoked well , also in a tagine you should leave a little bit of sauce in the bottom , veggies should be cut in juliens and set up like a pyramid , we NEVER EVER serve couscous with tagine and the couscous is NEVER boiled in water , it's steamed and no water touches it otherwise you're eating watery soggy couscous , I had a heart attack when alvin explained the "perfect" way , it's like saying the best way to make cake is to boil the dough , they got so many things wrong about moroccan cuisine , cooking a tagine is not cooking whatever in the dish , there are so many different ways you can do it but none of these ways presented here are considered a tagine

The thing about tajine is that you dont keep moving the vigies around The point is the put everything in a position to create a good look And close it and leave it cook Like they said the steam will work its magic and everything will be cooked perfectly in 1 to 2 hours But yeah I know they giving them only 45 minutes which is not enough time even for the easiest tajine

as a moroccan, i understand why italians cry when people cut spaghetti in half, for one 45 minutes is nowhere near long enough to make a tajine it takes around 3 hours for your average, second who uses peppers for tajine? and we use tomatoes only when making an egg and tomato tajine, and most importantly, PUMPKIN????? WHAT???. another thing is TAJINE AND COUSCOUS ARE TWO COMPLETELY DIFFERENT dishes cooked in very different ways and in no way compliment each other.

As a morrocan that is not a tajin, thats basicaly a "rwina" means a mess, what's the need to all those vegies and seasonings, tajin is suposed to be simple yet naturaly delicious, and you should know what vegies to mix together, also they made it look like babys moshy food, the vegies need to be placed carefully, they stay in place you dont stir them. When you eat you do by hand with a little piece of bread, if you did with only a spoon it will taste too overpowering idk but you should have bring a morrocan chef to show them the right way

The entire idea behind a tagine is that the lid spreads heat evenly, and the tagine works as a serving plate as well as a cooking pot. You need to dress your tagine like you'd present a dish, because that's your final presentation plus some garnishing, and you never stir vegetables in a tagine. I feel that they missed the entire point of how and why to use a tagine

not sure why there is couscous in the dish. Tajine is a stew without a grain element. Aaron grew up in a Sephardrim neighborhood so he can be excused for adding it , but generally there is no reason to add couscous.

Im a Moroccan girl And i wanna tell you this is not tajine we don't cut vegetables like that and mix it we cut it in appropriate way and decorate the tajine with this vegetables to have a nice good looking one Also couscous we don't make it like that we cook it with the steam not in the water and couscous and tajine are différents recipe we don't mix it together the things that we put it in the top of couscous not tajine it's another recipe and thnk u

Thats actually not tajine but tsegia dial couscous like the vegetables that goes with couscous,tajine is a whole another dish

for me as a Moroccan I can say that you all did it wrong, you must just add vegies and spices and close it, no steer nothing, just close it and leave it.
