I have about a 2 yrs experience with IT. If I want to transition to Defense/CyberSec would I still need to do the Security+ ? I also don't have any official certifications. So I'm wondering if getting the Blue Team alone would be sufficient to move forward

I am afraid in your position, sec+ is the starting point. It's still the go-to to get past HR and recruiters for new comers.
