Mrs. Field’s Gluten Free Banana Nut Muffins
(Adapted by Faith and Flour)
2 1/2 cups Gluten Free Flour Blend (see recipe below)
1 1/2 tsp Baking Soda
1/2 tsp Salt
1/4 tsp Xanthan Gum (if your GF flour blend does not contain)
3/4 Butter, softened
1 1/2 cups Light Brown Sugar, packed
2 Eggs
3 cups ripe Bananas (about 7 medium)
1 tsp Vanilla
1 cup chopped Walnuts
Preheat oven to 325 degrees F.
In a medium bowl, whisk together the flour, baking soda, salt and xanthan gum; set aside.
Cream butter and sugar with an electric mixer. Add eggs, bananas and vanilla, beat at medium speed until thick. Add the flour mixture and walnuts, then blend at low speed just until combined. Fill muffin pans and bake for 25-30 minutes or until done. Allow to cool in the pan for 10 minutes. Move muffins to a wire rack to cool completely. Makes 3 1/2 dozen muffins.
Gluten Free Flour Blend:
2 parts Brown Rice Flour (extra finely ground) - 2 cups
2/3 part Potato Starch (not potato flour) - 2/3 cup
1/3 part Tapioca Flour - 1/3 cup
Mix well and store in an airtight container.

Hi Robin, I would like to give you a little tip for flattening cookies: you could put another sheet of parchment paper over them, put a second baking sheet on top and press down - saves time because you're flattening all the cookies at once. Robin, those cookies are like shortbread. You can shape it into a roll, chilling for 30 minutes and then slice and bake. Alternatively, you can chill, slice and freeze, which means that you can hair just a couple at a time,rather than bake and eat them all (who, me??). We had a hailstorm here in East Yorkshire at the weekend, and I thought they were big! I do love your channel, it's like spending time with a beloved friend. Stay well, be safe xx

Happy Mother’s Day friend. I hope you’re having a great one. First of all this Texas weather has been crazy hasn’t it. We’ve had nothing but rain over the last few days in my backyard looks like a lake. Melissa had some hail up in Dallas but we didn’t have any down here your muffins and cookies look so good. I always smash all my bananas up first but next time I’m gonna try doing it like you do and just putting them in the mixer. I’ll bet those cookies would be good with some walnuts in them too. I sent you an email a couple of weeks ago I think but in case you didn’t get it we’ve had a wild time here. We had Rachel‘s graduation from college and her college is about four hours from here. We had planned to stay the weekend but her precious other grandmother passed away a few days before and her funeral was the day after her graduation so everyone had to rush back. Melissa, my daughter in Dallas unexpectedly lost her job. It was quite a shocker. So when she came down here for the funeral she stayed a few days with me which was nice. She did a lot of work for me out on my deck. She helped me buy plants and re-potted them all and some other things that I wanted done out there and then this Friday Rebecca and Jimmy came over and Rachel and they power wash the deck and did some other work for me. That was the best Mother’s Day gift ever. I always ask for the gift of work because that’s what I need more than anything. I also had to go have some test run at the hospital. The doctor was concerned about my circulation so I had to have A Doppler done. I will see him on Wednesday to talk about that and my blood work etc. I told my daughters I hate to even go to the doctor now because every time I come out with something new. I also just found out my niece and her husband both lost their jobs. What is going on? But our trust in the Lord and he is where the joy else. Thanks for this great video I know I’ll watch it again. My favorite chocolate chips i buy for my husband are Guittard brand. They don't use soy lecithin. They use sunflower. Thr best ones that i biy for myself that are keto friendly are from ChocZero. They also don't contain any soy and they are just wonderful. They also only use monkfruit as their sweetener.

Greetings from South Australia Robin, in answer to your question, no I don’t think we have had hail quite that big, and isn’t that out of season for you? You should be heading into summer! We are on the doorstep of winter here but I’ve never seen hail bigger than a golf ball and that is rare. Our winters are comparatively mild, once we get down to single digit temps we think we are freezing! 😂 Thanks for the recipe share and pass on cuddles to that lovely doggie 🥰

It isn't unusual anytime of the year really, but the spring storms are usually the most extreme. Your winter sounds similar to our Texas winters - except for the recent ice storms here.
