The vast majority of omurice dishes are made using ketchup as a flavoring and binder for the rice portion and as a topping over the omulet. Kishikichi's omurice is different in that they replace the ketchup with demi-glace in the rice and as a topping. Demi-glace is basically a super concentrated reduction of beef stock. It has a very rich and meaty flavor with a slight bit of bitterness to it.
