Actually, that's literally what they are! The first draft for Good Omens had only one character representing Heaven/Hell (a rebellious angel, i think), but then Terry Pratchett suggested that character be split up into two which is how Crowley and Aziraphale were created :)

Douglas Adams, who created Hitchhiker's Guide, was actually one of the writers for Classic Who, which is why they have very similar feels and humor - even though NuWho is created by entirely different people, it's created for the most part by people who grew up watching Classic Who (both Peter Capaldi and David Tennant were HUGE Who fans as kids and teens - Capaldi wrote a letter to the BBC offering to be the showrunner when he was nine, and Tennant used to get in trouble at school because all his essays were about Doctor Who).

He is intelligent, so that suggests he isn't the other two (although I think the writers at that point were just meaning that paranormal beings didn't have such categories or sexes or sex, as you mention).

This would instead suggest that people see Aziraphale as "gayer than a tree full of monkeys" (gay as in lively giddy, this is not refering to the sexuality). Due to his friendly and innocuous appearance. This is the author's way of saying that he looks harmless and is therefore categorized by people as not intelligent.

Quick note about the group name 'The Them'; they kept changing the name of their gang based on whatever Adam was interested in that week while the rest of the town referred to the group as 'Them' which is why they started using it as well. I have read the book "Good Omens" a few times since it was published. I never hold out much hope for adaptations of books I love. However, I thought the show was one of the best book adaptations that exists. I hope you enjoy it, too.
