Cakeshare, my three chocolate mousse recipe! ASMR

COCOA BISCUIT:
1 egg
30g sugar
30g “00” flour
10g cocoa powder
2g baking powder
25g milk
28g seed oil
WHITE CHOCOLATE MOUSSE:
3g gelatin sheets
15g cold water
80g warm milk
120g fresh cream
120g white chocolate
MILK CHOCOLATE MOUSSE:
3g gelatin sheets
15g cold water
80g warm milk
120g fresh cream
105g milk chocolate
DARK CHOCOLATE MOUSSE:
3g gelatin sheets
15g cold water
80g warm milk
120g fresh cream
90g dark chocolate
MIRROR GLAZE:
56g cocoa powder
168g sugar
6g gelatin sheets
30g water
130g water
180g cream
DOSES FOR: 8 PEOPLE
SILICONE MOLD DIAMETER: 20 cm
STEEL MOLD DIAMETER: 18 cm
This cake is definitely one of my favorites for both taste and presentation. Don't let the preparations scare you, I'll go into detail now.
As you can see from the video, the mousse compound should always be placed in the freezer for about 15 minutes before adding the semi-whipped cream, this is used to bring the two compounds to the same temperature. Conversely, the first compound, i.e. chocolate with gelatin and cream, would melt the cream.
This step is very important to obtain a good result of the mousse.
Both for the milk chocolate mousse and for the dark chocolate one I have not shown the step of soaking the gelatin in cold water. I recommend as a first procedure for both you will have to put the gelatin to soak as shown in the white chocolate mousse.
The glaze must cook up to 103 degrees, this serves to caramelize the sugars and obtain a glossy glaze. Remember to filter the mixture once cooked and then blend gently so as not to create too many bubbles.
The following day or after resting for 12 hours in the refrigerator, the icing must be heated in the microwave for a few seconds to a temperature of 35 degrees, be careful in this step not to damage the structure of the icing.
Once glazed, the cake will have to stay in the refrigerator for about 7/8 hours before you can eat it.
All the decorations were made with tempered white chocolate and subsequently printed with the various shapes.
