I've been told not to use those remodeling boxes on light fixtures because they do not bear enough weight. How much weight can they hold?

More than enough. The small rectangular boxes ment for light switches and recepticals shouldn't be used for ceiling fans or chandeliers. They'll hold most sconces and other wall mounted light fixtures without any issues. The remodeling box he uses here is specifically ment for mounting heavier vanity lights. Its thicker material and has more securing brackets than the standard boxes. Hope this helped.

Put a piece of metal on the stud so that if somebody drives a nail on the stud it will not short.
