The NPC character development is kinda like the Nemesis System of Middle Earth:Shadow of War. The Orcs and Uruk that you kill/die to can grow, get stronger, weaker, go insane, gain strengths and weaknesses, as well as gain new voice lines depending on if you kill them and they come back to life, or if you retreat of if they humiliate you after you die to them.

It's more just movie props. Like those medieval movies where warriors are slicing through plate armor. If it was realistic, it would be boring watching two dudes beat each other with swords for 15 minutes before one finally messes up and gets stabbed through a gap. Likewise here all that would have needed to be done was delete the one npc and the movie would have just ended.

There is a New Zealand KZbin channel called Viva La Dirt League and they’ve had a series called EpicNPCman that has been going on for years. It covers video game tropes and MMO player behavior and so on. One of the NPCs (Greg the garlic farmer) have become self aware. It’s worth a watch. Interestingly an actor who has been in several Taika Waititi projects by the name of Hamish Parkinson is in several VLDL shows. What makes this intersting is Taika appears in Freeguy.
