Mr Bali Hai - Rum, Pineapple & Coffee Tiki Cocktail

Originating from the Bali Hai restaurant in San Diegeo around the 60s. It was named after Mr Bali Hai, the restaurant's statue that prominently sat out front. Typically served in a tiki mug but an old fashioned glass will also work perfectly fine.

A welcome combination of rum, coffee and pineapple that works surprisingly well. The original recipe calls for a 35% coffee-infused brandy in order to stand up to the strong flavours of the combination of rums. Mr Black Cold Brew Coffee Liqueur is the ideal modern alternative due to it's bold coffee flavours that come to the forefront.

INGREDIENTS
- 45 ml Dark Jamaican Rum (such as Coruba)
- 30 ml Lightly Aged Rum
- 22.5 ml Mr Black Coffee Liqueur (original calls for coffee-infused brandy)
- 45 ml Pineapple Juice
- 30 ml Lemon Juice
- 15 ml Simple Syrup
METHOD
1. Combine all the ingredients into your cocktail shaker
2. Briefly shake with crushed ice to mix
3. Pour into a tiki mug (or double old fashioned glass)
4. Top with crushed ice
5. Garnish with pineapple fronds, skewered cherries and orange peel

This is one of my favorite tiki cocktails. I love the Mr. Black in it for all the reasons you said! It's incredible. This is one of the more unique classic cocktails and honestly, it's just such a treat. I mean, honestly, who would have ever guessed pineapple and coffee would be such a winning combo? It's so unusual sounding but so damn good.

I would enter the contest,but I just think my creative cocktail is well THAT creative. I call it The Long Night at the Arcade. Since the Long island iced tea is my favorite drink I wanted to make my own version of it. Basically all liquors of a Long island but with added heavy cream, swapped out sour mix with Orange juice, two dashes of orange bitters and after shaken and poured, the drink is topped off with a dunked bottle of Orange cream soda.

I bet you could get away with that, just reduce the amount of simple syrup you use. Maybe try mixing all other ingredients, taste for sweetness and balance, then add simple syrup as needed.

It might be a little too early to post now in November but christmas is around the corner so be prepared ok! 😁 One cocktail I have in mind, and this is merely a sample which I have not tested yet. It's a variation of a 𝐁𝐮𝐜𝐤/𝐌𝐮𝐥𝐞, includes Rye Whiskey, Fireball Cinnamon Whiskey, Lime, Honey and of course Ginger Beer! I figure these ingredients would work well together, but I don't really know.

I found this recipe to be “interesting.” After a few tweaks it was amazing. I simply omitted the pineapple, lemon, simple syrup, and substituted Bailey’s for the dark and light rums and it was perfect! 😜
