Giant Millionaire Shortbread

Ok so my wife Mrs Barry is a huge fan of millionaire’s shortbread, so lets let her dream come true and make one the weight of a baby rhino! This turned out incredibly delicious and fed a baby shower plus 4 separate households! Truly epic! I’m not sure if this is the World’s biggest millionaire’s shortbread, but it was certainly more than one portion!

Also the gadget you used for rubbing the butter makes sure you don't melt the butter like the heat of your fingers will do so.

A nice trick for doing caramel, is to drop a bit into a bowl of cold water. Then you can feel the texture when it's cool and determine if it needs more cooking.

Barry, you can grate the butter in before you mix it in and it works great. Just make sure it’s REALLY cold.

It can be frozen once its cut up into pieces. So there's always some whenever you want it. Bash it frozen with a hammer and sprinkle it once defrosted on top of your ice cream its lovely

personally i would have used dark chocolate or added a touch of cocoa to the chocolate, oh and to get the first layer flat you could have laid a bit of parchment paper over it and used a rolling pin to make sure it was level

You need a nice small sharp knife on hand when using the pastry blender. As the butter gets stuck, just use the knife to get it off. You never want to use your hands anyways. You want the butter nice and cold to keep the shortcrust flakey. And have nice bits of unsoftened butter to make the layers. And, would you not be worried about pests in your garage? Like mice and stuff? Next time, you have something large....remove the door shelf holder thing.

Barry, next time freeze the butter in ice cream trays and then transfer to a freezer bag and freeze until needed. Take out for a little while so it is still firm but defrosted.

The one thing I've tried that's nicer than millionaire's shortbread: millionaire's flapjack. Flapjack (the UK type - oats baked with sugar and butter) topped with caramel and chocolate. It's ridiculously naughty but so very good.

Well i missed rice flour in the dough…. But this is billionaires shortbread. Because weather you take sugar and butter or the condensed milk and let it caramelized and reduce it to be more firm.. then it will harden faster. And you are able to put the melted chocolate earlier. At least with my Scottish recipe
