Meh, good quality chocolate is still chocolate. They just add unnessary steps. Or has Barry even said, take out a lot of steps. I've also noticed a few brands of chocolate that are very grainy. It's not to be "posh". it's just down to not grinding for long enough. And to be quite honest. Don't taste that great. Good quality chocolate can taste good at times but mostly it's just paying for a brand. A good wetstone grinder can smooth out the chocolate, just takes hours, but when it comes out it's really amazing, smooth as butter and has a much better taste to it.

Barry, you said the cocoa wasn't ground far enough, but how could you grind it any further? I thought you were already saying you were getting it all clumped together because it was starting to express the cocoa butter and stick together, would using the wet-and-dry grinder have prevented that being an issue?
