I think she loves pork. I remember her picking the pork off a Cubano sandwich when in Florida. Plus she stuffed it into her mouth at Spitfire BBQ. Little girl has good taste!

The next time you BBQ at home and do a butt portion, shred it, add the sauce and bake you a nice potato. First, top the potato with some butter, sour cream, shredded cheddar cheese, and maybe even some diced green onions. Then pile the pulled BBQ on top and have what we call a LOADED BBQ POTATO! You will LOVE IT!!!

Burnt Ends are considered the "Chef's Cut" by many, including myself. Though some find them too intense in flavor as they soak up the most smoke on the brisket. I will fight for burnt ends lol.

For me burnt ends are hit or miss. I've had some that were amazing and I've had others that were average AT BEST. So its a risky choice for me

First ones I had were the best. Was a bbq festival. Just regular people, selling bbq and competing. Jamaican family was there, making brisket. To the best of my understanding, the briskets were marinated/pickled in a big bucket of jerk seasoning and zesty italian dressing. Dear god. Just... juicy, oily in a good way, you could taste all the italian dressing bits. The garlic and pepper, and all the jerk spices, with a built-in sweetness. Nothing needed sauce. Have never had brisket or burnt ends better than those.

Shredded pork is traditionally pork shoulder. It can be other cuts, but shoulder is best.

The pulled pork with the carolina sauce and then the coleslaw on top in a sandwich... best thing ever. Easy to make, great easy smoker recipe and very forgiving. Be sure to wrap it to make sure it pulls easily. I recommend making some buns, or buying a good brioche bun for a sandwich.

Burnt ends are always a go to. I just find them to be so flavorful. Plus I love a nice char too. I'm also so glad you decided to try out all of the sauces they had. You never know when you'll find your new favorite unless you experiment. I hope you visit as many BBQ places as you can afford because all of your videos are a joy to watch. The H Family are honorary Americans in my book.

The story about burnt ends was told by Calvin Trillin many years ago about Arthur Bryant’s bbq in Kansas City Missouri. They are a specialty here in KC and one of my favorites, along with pulled pork.

Pork butt is part of the shoulder. Lexington style BBQ smokes whole shoulders, while Eastern Carolina is whole hog. Lexington sauce is ketchup and vinegar based and Eastern is mustard and vinegar. The sauce is used after cooking by pouring over the cooked and chopped meat, or by dipping the meat as it is eaten. Lexington style sandwiches have "red slaw," which is tomato and vinegar based cabbage slaw.

Nope. Mustard is not in Easter style sauce. I have made Eastern Sauce. It is Apple Cider Vinegar based. Red pepper goes in it too. Mustard sauce is South Carolina sauce.

Mustard based BBQ sauce is from South Carolina. North Carolina BBQ sauce is divided into eastern/western. Eastern NC sauce is simply apple cider vinegar with salt, crushed red pepper and black pepper while western NC sauce is primarily ketchup and vinegar

Greetings from New Orleans, Louisiana. While we do have some decent bbq here as of late, people come for the stuff that we do so well: gumbo, jambalaya, po-boys, seafood, crawfish boils (well, everything), beignets, charbroiled oysters, muffulettas, pralines, red beans and rice, fried chicken, etc etc etc. Glad to see y'all enjoy the food y'all do and I hope that y'all do make the trip to New Orleans when y'all can, bring your elastic pants made for eating.

I’m deep in the heart of TEXAS! I proud to be a lifelong TEXAN! I live in a beautiful part of the state known as the TEXAS hill country. It’s north of San Antonio my original home town. The longer I live here, the more I really appreciate what makes this place so special. I’ve actually worked in a BBQ restaurant. Not a rare thing here.😆

You love the marble cut better than the lean cut of the brisket. You can request marble cut when you order. Specify next time, get what you like. 😁

“Carolina” BBQ still covers a wide range of sauces. The mustard based sauce is more of a South Carolina style. North Carolina style is split among Eastern Carolina style which is completely vinegar based with red pepper flakes and other seasonings added for heat and flavor, and Western Carolina style which is a sweeter tomato based sauce but still pretty heavy on the vinegar and seasoning.

Baby H is just like my girls! She loves that bbq meat 😂 My girls can out eat an adult if you put brisket/pulled pork/steak/ribs in front of them. It's a wonderful food to love! And for me, the sauce is just as important as the meat. A sauce can ruin or make a meal, so I'm glad yall found some you liked. Can't wait for yall to come to TX and have some great BBQ here!

As a Bama Boy it's good to see our white sauce is known across the pond. Also I love to mix the pulled pork into the beans. Fantastic! Also-get some pistachios in the shell, coat with hot sauce, the brine from a jar of pickled jalapeños if you have it, garlic powder and whatever else you like, and put them in the smoker until dry. It's like crack!

When you come back to Texas look for Liquid Smoke in the grocery stores and send some back home to use in your cooking. You can add it to your Bar-B-Que sauce when you are cooking.

I would have to disagree with that one. Liquid smoke is actually a pretty vile product if you know how it's made. They have a smoker now so they should do what I do and smoke some salt. Start a small wood fire in the fire box, wait till you've got a good clean smoke going at a very low heat then place a disposable aluminum tray with about half an inch of Kosher salt - I like Morton's - and place the salt in the smoker. You'll want both the exhaust vent and the fire box vent about 1/2 open. Stir the salt every 15 minutes for an hour. Then let it cool and put it in a labeled container. Now you have smoked salt that can be used for many more recipes than barbecue. It's great on fish as a finishing salt or it can really enhance beans and take your bowl of pintos to another level. Just one drop too many of liquid smoke can ruin a dish without repair as it has too many forward notes. Smoked salt can be forward when used as a finishing salt or that taste in the background that'll elevate a dish if it's used as a seasoning salt.

Have you ever tried Santa Maria tri-tip? This is from central coast California. It is a beef cut grilled over red oak. Also Pollo Asado. That is chicken grilled with Mexican flavors. Hope you keep trying good stuff.

There are two kinds of Carolina bbq sauce. North Carolina style is vinegar based and South Carolina gold is sweet mustard based. Both go great with pulled pork. I prefer the South Carolina style, but both are good.

I grabbed a pouch of my last batch of pulled pork from the freezer for dinner tonight, then sat down and watched this. Even if I hadn't I would be craving BBQ all night. Love watching you all experience all of our food. Cheers from Alaska.

I'm a Florida native. Where I live the burnt ends sell out a lot because of their popularity. Some places you are lucky to ever get burnt ends unless you get there very early in the day.

I think it would serve you all well to get Alana her own BBQ plate from now own. 😂 There are child size meals there right? Whenever you decide to come to the Carolina's may I suggest finding somewhere to stay on the North and South Carolina state line. You'll want to plan on 3 BBQ dinner's while you're here. The Carolina sauce you tried in this video is a sauce used in South Carolina, BBQ 1. Then North Carolina you'll want to plan for a dinner with Eastern Style BBQ. They use meat from the whole hog. From the rooter to the tooter to quote Kat Williams. They use a vinegar peppery sauce that's light and spicy. BBQ 2. Then the Western (Lexington) style BBQ which only uses pork shoulder, aka Boston Butt meat. Their sauce incorporates Ketchup and most times brown sugar making the sauce richer and sweeter. BBQ 3. You can find beef BBQ here in the Carolina's but pork BBQ is what the Carolina's are known for. While you're here in the Carolina's, hopefully North, and you plan on staying any significant length of time like you are in Texas, you might as well plan on heading to our neighbor state of Tennessee and visit Memphis. BBQ dinner number 4. There are 4 main BBQ capital's in the US. Texas, which is your next trip, Carolina, Memphis and Kansas City. You can knock out 2 BBQ capitals. in 1 visit. Maybe plan your Kansas visit at a later date. Once you visit there, if that's something that would interest you, then you will have bragging right's that a majority of American's don't have. That is you would have eaten BBQ in all 4 BBQ capital's in the United States. On an unrelated non food note traveling into Tennessee heading to Memphis you can stop and visit the largest private home in the US, The Biltmore House and Garden's, located in the mountains of Asheville North Carolina. George Vanderbilt built the house in 1889. It's open for public tours. I like to think of it as America's, European castle..

You are going to have to get Baby H her own kiddie plate next time. She was really enjoying it. ❤ We do have peach salsa here in the US. It is normally made with corn, but I also make it with black eyed peas. Great video as always!! I like the fat in the middle of the brisket. Just ask if they can slice it thinner.

I had a baby about that age try meat for the first time-same thing happened. He ate half mine, half my wife's, and most of the lady's sitting next to us. Now he's 6'-5' and 320 lbs.

I think the baby could have used her own box, no doubt she will be a bbq aficionado. It's safe to say Bristol may be the bbq capital of Great Britain. Brisket is best when there's .a lot of fat in the meat, it can smoke longer and retain all of that glorious flavor.
