something i have done in the past to give apple pie crust a flavor boost is to use cold Apple Jack or Apple Juice/Cider instead of water. i generally use a mix of Granny smith, Honeycrisp, and Braeburn. when baked, they soften up to different degrees lending a nice textural element to the pie. another wonderful topping for a slice of apple pie, (and this is going to sound weird, but trust me!) a slice of very super sharp cheddar cheese. after topping the slice, give it a moment in the microwave/oven until the cheese only barely begins to melt and droop a little bit. the first slice never comes out easily. my "usual" apple pie is one of the types that doesn't have as many spices. there are a wide range of recipes with varying amounts of spicing.

Please try Kentucky Jam Cake. It is a once a year treat and not simple to make. It has a lot of ingredients. But sooooo worth it. This apple pie recipe was perfect good job!!

Great job on the pastry, H's!! And Mrs. H, you are right, it needed another apple. I will say my pie filling recipe is totally different to this one. I make a brown sugar and butter caramel, never actually seen one with just a dry filling recipe (that I'm aware of). Also, I have a super amazing secret ingredient: before I lay down the top crust, I grate some real Parmesan (no silly processed "Parm"! :D ) and sprinkle it lightly all over the top of the filling. It basically salts the caramel in a funky way and I love it.

Alirght, are you ready for this? Can look it up if you don't believe me. Take your apple pie, heat it a little and put a sliced chunk of cheddar cheese on it. This is a regional thing in America, i've tried it and its very good. Apple pies in general are usually done with less appealing to eat raw apples, why granny smith are common as they can be more sour than sweet.

Edibility is the frame work, taste is the structure, presentation is the trim and decorations. You're essentially building a home when you make something and some things are far more important than others. People won't care if you have the most beautiful looking pie if it's absolutely inedible and tastes horrible. Focus on getting those down before worrying about how it looks. As a lot of military and those who did youth scouting in various forms found out, it all ends up at point B and C the same anyways and the difference at point A is defined by taste and edibility. Point A being your mouth, point B being your stomach, and point C being the "exit through the gift shop." It doesn't matter if your pie looks pretty if it's got literal brick in it and has glue and wood in the filling. So again, start with edibility (which isn't difficult), refine the taste (which can take a while), and then worry about if it'll get any likes on Instagram or not.

You guys need to stop apologizing. Everyone here understands it's your first time making this stuff. We love watching the effort you are putting in to try making these American dishes. As with anything, the more you do it the better you get (practice makes perfect). If anyone is laughing, we're laughing because we all remember the first pie we tried to make and we remember the struggle, so we're right there with you. You guys are such a great family, and we love you and your love for all things American!!! If you really want to compliment the apple pie, use a scoop of CINNAMON ice cream instead of vanilla!

I love it when there's cinnamon added in. It doesn't matter if it's topping the ice cream or mixed in with the pie. It just makes the flavor of the apples much better.

Honeycrisp Apples are texturally similar to Granny Smiths, slightly more sweet and less tart. I love them for everything. Bake really well, nicely balanced for raw consumption also. Fruit pies are typically made in season. So peach cobblers pies middle of Summer, Cherry and Apple late Summer-Autumn. Strawberry Rhubarb late Spring-Early Summer. Always hope that any criticism is constructive. I love watching you guys try to make your own. Mrs. H is getting way more confident/competent in the kitchen than she gives herself credit for as well. It should always be fun and enjoyable.

Unfortunately we don't really have honeycrisp apples in the UK. Apparently the best apples that are similar to the Honeycrisp apples are "Pink lady", "Saturn" or "Scrumptious" varieties of apples. They have a similar crispness, taste and juiciness.

The first slice of any pie rarely comes out looking pretty, so what really matters is how it tastes! Apples are typically harvested in the fall, so traditionally, apple pie is a fall desert - even if you can now make it any time of year. And there's nothing wrong with using store-bought pie crust when you make a pie. Some people (like me) find it difficult to make a good pie crust.

American rolling pins are much bigger and heavier with handles, and that makes it much easier to roll out your dough. 👍🏻👍🏻

Plus separate handles on a rod going through the rolling pin, with ball bearings. Much easier to put uniform pressure on it that way. *Real* pressure. Plain pins have never made much sense to me. How can you push down and roll effectively at the same time? The harder you push, the harder it is to roll, and you're limited lto the length of your hands instead of a nice, long rolling motion, end to end.

@@monicapdx You are exactly right my mother had that kind of rolling pin with the moving handles, that's a little bit more advanced but that is also an American rolling pin. Her rolling pin was really big and heavy it was at least 3 inches to 4 inches across or wide.

Y'all did just fine with the pastry, especially since its the first time making it. I used to be really hard on myself about crusts until I saw many Chefs on TV simply patching a torn crust or filling things in when necessary. I figure if Julia Child and Jacques Pepin did it that way it'll be just fine. And the best part about these homemade recipes really for anything is that once you have the pastry nailed then you can play around with the filling like different apples, maybe add pears or raisins (sultanas) or even change the type of ratio of spices. But really this is an A+ especially for a first attempt.

Yeah, I couldn't see the patch of crust until y'all pointed it out. I thought it looked pretty damn good. When there's little volcanoes of apple filling juice coming out the crust, that's delicious. I'm happy Elana liked it. I bet you she's going to grow up to be a professional food critic one day. ;)

I was really surprised when Mister H said he had never had apple pie! You see, apple pie is so common here it give the impression that most people of the world would have tasted it. Now, there is a common phrase that means an essential or typical form of something which embodies Americana is this: "It is as American as apple pie!" I did not know it was to be taken literally, LOL!

The red delicious apple is from the United States Iowa 1870s, and the golden delicious apple is from West Virginia also the United States early 1900s.

With your first attempt turning out as well as it did, I think you have a wonderfully rustic classic presentation. This was an honestly home-made pie that you can be proud of. I tend to favor the firmer, more tart apples, such as the Granny Smith, but some of the other, less firm apples can make a wonderful addition to the filling, bringing more sweetness, and cooking down more softly, to fill gaps between firm pieces of apple. As long as you enjoyed the results, you did it RIGHT.

That pie is gorgeous!! Pie is pretty forgiving. You thought it looked terrible, but it looked perfect! One suggestion, after you put the filling in the crust, you could put a few pats of butter on top before adding the top crust to make it a little saucier 🤔 saucy er. Lol Great job H Family!

The pie looks AMAZING! It NEVER matters what it looks like. The taste is all that matters! I must admit that we have apple pie I'm the fall more often because it is apple season. We go to an orchard on a nearby mountain and buy apples, fried apple pies (NOW THIS IS WHAT YOU NEED TO TRY), apple turnovers, apple dumplings (I like these more than the pie and even apple cake. The apple pie just seems appropriate the fall because of the cinnamon, nutmeg and all spice.

Apple Pie is my favorite pie here in US n we have several different apple trees. I make my crusts from scratch ( my mom got blue ribbons for her flaky crust) Just remember to put vanilla ice cream on top. Lol

The reason the pie crust top was not staying together was because of how tightly you rolled it up on the rolling pin. The task is just meant to help pick it up.

There are many variations of apple pie recipes. Most will use a mixture of apple breeds such as granny smith and honey crisp. I add raisins to my mix for a French Apple flavor twist. Many old American recipes use a ceramic device placed in the center of the pie through the top pie crust, called a "pie bird" which functions as a vent. This prevents the pie crust from separating from the filling causing a pie crust gap. Don't get caught up with arguments on spices. As you have experienced, spices add flavor and wonderful aromas which enhance the culinary experience. When repairing dough use your trimmed pieces with water to repair cracks and holes. To prevent the bottom crust from sticking, use a nonstick spray on the pie tin before applying the bottom crust. Great job for a first try with a homemade crust.

You need about twice the amount of apples and you also need to get someone in the US to send you an American style rolling pin. Yours seems to make you struggle way more than necessary. An American rolling pin is larger, heavier and the handles spin so the pin spins like an axle, making it so much easier.

Another way to fix the holes is to cut shapes out of your remnant pie crust and cover the holes with them. Don’t be afraid to make a batch and a half of pie crust you will always get full circles and have some left over to bake on the side that you can put some dried herbs or cinnamon and sugar on.

Keep looking when you go to buy groceries for what is usually called an Asian apple,, it is a cross between an apple & a pear,, they are absolutely delicious if you can find them.

My mom was always a "mix by hand" person for every baking recipe and sometimes other recipes as well! Mixing by hand makes it easier to incorporate the cold butter into the flour, by rubbing it between your fingers until it forms crumbs. Then add the fluid!

I have always used a pasty cutter they seem to blend better for me. I don't make butter pastry though, so I have no idea if one would work better for that.

Lots of good comments below. One thing I would mention is that spicing apple pie (and pumpkin for that matter) is a very personal thing. My father wasn't big on a spicy pie, so ours was usually fairly straightforward with cinnamon and sugar and a bit of nutmeg. We always say the nutmeg should be present but not entirely noticeable. Just a dash. :) I also cube a bit of butter with my apple/dry ingredient mixture. Not a lot, just a couple of tablespoonsI have never put vanilla in my apple pie filling, and I usually use about 10-12 apples, as we like our pie to be FULL. If I am buying apples just to make a pie, I mix them up, buying a few Gala apples, a few Granny Smith, and perhaps McIntosh or Northern Spy. But usually, we buy a half a bushel of apples each fall so we only have one variety and that works just fine. I didn't notice anyone pointing out that the first slice of pie is always the cook's slice. :)

I've been making apple pies for decades as they're my wife's favorite. It took years to perfect what Peggy calls "just right". Trial and error with what you add to your apples is the best bet for most. I prefer simply cinnamon, to taste, and sugar between 1 and 1 and 1/2 cups depending on the tartness of the apples. I was 2 teaspoonfuls of apple jelly too firm up the juice made by all that sugar being added. Ad for the pastry you should add more water. The dough should be very soft and pliable to roll out smoothly and not crack. Time and repetition will improve the final product.

Food processor makes the job super fast and easy when making pastry dough - add ice water in slowly and pulse until mixture looks like small pebbles it’s perfect … also, I’m from NY and we melt yellow cheddar cheese on top of the pie slice - thank me later! You guys did awesome and so happy you love this true staple of Americana desserts!

I love spices. I hate apple pie that has only nutmeg and cinnamon its so boring. But every one is different. Some like cheddar cheese on them Yuck. Not for me.

I think Mrs H was correct when she said she'd add more apples next time. My mother's recipe had apples heaped into the crust, and that would basically dilute the spices a bit.

My current favorite apple is Arkansas Black. It has a tart taste when first picked, but in storage, it mellows into a sweeter apple with notes of honey, vanilla and almond. Honey crisp is another favorite. Never had apple crumble with custards. Fresh peach pie with a crumble top is one of my favorites Columbo was my mom's favorite when I was a kid. We watched a lot of episodes You did great for your first crust! It is the hardest part of pie and a developed skill.

Finally, a cooking video without using a store bought mix. I don't care if it comes out wrong, I appreciate a failed attempt at doing it right more than a perfect attempt at doing it wrong. And if you're open to advice about cooking with smoke from someone raised in a barbecue family, here it is. It starts with the wood that you use. In the barbecues where I grew up, people used pecan wood or hickory. I know those aren't really available in the UK, but apple wood is also a very good choice and I think you have several species of apple over there. You want dry split logs burnt to coals before you put them under the meat. I'm sure there are a number of great species of wood in your country that will work great, but there are some that you definitely want to stay away from. For instance, cedar and cherry wood have toxic oils that can get into the food and make people sick. Good luck. Love the channel.

The beauty about apple pie is that you can have it anytime. You can have it during any holiday and some people will have it as part of the dessert bar at wedding receptions. I love it with vanilla ice cream with caramel syrup. When my father was alive he ate it with a slice of cheddar cheese.

Great job! Don’t worry about presentation, it’s always messy. Like Mr H said, it’s all about the taste. There is a quote here that says, “American as apple pie”. So welcome to the club. Glad you liked our dessert. Apple pie can be eaten year round but more so at family gatherings like the 4th of July or Thanksgiving. But any occasion will do. Pecan pie is an equal as well here in the south anyway. Great job and great video!

Yes I remember Colombo just one more thing . Your apple pie is beautiful and realistic to what a lot of people are making in their kitchens in America unless they’ve been making this all their lives. The fine details of making a pie crust look beautiful is a learned skill by practicing. I bet it tasted wonderful I would like to have a slice. Great job to both of you.❤️✌️🌼

Well done!!! That looks FABULOUS!!! And there is nothing wrong with rustic. Just shows people you made that from scratch and homemade is always best. I was going to comment about doing the fold over for the crust and then you did it, lol. There's no way that Mary could regret sending you her recipe. You MADE pie crust instead of being able to use a frozen pre-made one. That alone gets you an A. Definitely try it with the roll out pre-made pastry for the next one. When it comes out of the oven is when your first bite is with your eyes, lol, and that was one good looking pie. I love Dutch apple pie more than regular. The Dutch apple has a crumble topping to it. You can also use two knives to incorporate the butter by doing a crossing motion or get a pastry cutter. Using your hands can be tricky because you don't want the butter to melt with heat of your hands, hence the reason why the butter should be so cold. When you take the dough out of the fridge, let it sit for 2 or 3 minutes before you roll it out so it won't be as solid and then to lessen the breaking, do one roll pass and do a courter turn on the dough, do another pass and turn...repeat. That helps keep it more uniform :). The longer it takes to roll out the more time it gives the butter to melt so it becomes a less flaky crust. I've never seen an apple pie that dark either. I'm more used to the filling being a more wet version. It's cooked on the stove so that the sugars melt down and become gooey so you can really coat the apples. It's more like the store bought canned pie fillings. I don't like them as much but they work in a pinch. I like using the King Arthur baking's apple pie recipe. You should also make their lemon chess pie recipe...YUMMMM!!!!

You two were way too hard on yourselves. I think I've made a pie crust once. It's a bit of a challenge at first. The pie looked so good and I'm sure it tasted wonderful with that spice combination. I think this was one of my favorite Cooking with H videos. You two cracked me up and Alana is such a sweetheart. I can't believe how much she's grown! It seems like she was just born a few months ago. Time has certainly flown. I hope you keep doing the Cooking with H videos. I love that you did the British recipe for Scotch eggs and would love it if you might show us how to make Sausage Rolls. They looks so good. I would love to try them. I'm looking forward to your next video

Most people use just regular white sugar not brown sugar. Also you can pre bake your crust for about 10 minutes so it won’t get “soggy”

Yum! You should try making a "mock apple pie" as well. Theres 2 versions i know of one w applesauce and one w cream of tartar. The one w cream of tartar is better in my opinion. During the US great depression its what people would make instead of an apple pie.

Although we can get apple pie here all year long it really is an Autumn dessert because our fresh apples are picked in the fall. You did a great job for your first try at pastry dough but it is a lot of work which is why we purchase either frozen or refrigerated pie crusts. Also, the ratio of water to flour in pie crusts varies depending on the humidity of the day. As for the first slice not coming out "perfect", that's pretty much tradition. Trying to get that first slice out of the pie plate is almost always the messiest. 😉

My great grandma made the best pies I have ever had. She used shorting in her pie crust to get that crispy flaky crust. I tried to make them and failed. The apples were perfectly tender and sweet. Thanksgiving will never be the same without her.

My crust has a little apple cider vinegar in it, and cinnamon and nutmeg for the spices. Melted cheese on hot apple pie is delicious. My husband likes me to make cheesy apples. I think the original recipe was supposed to go in a pie 😂. Anyway, try Velveeta, Colby Jack, or Cheddar next time. We had cherry and apple trees when we had our farm, and I had lots of apples to use. Still include apples in my rice stuffing for turkey if you'd like the recipe. Not traditional, but the only person that didn't like it hates onions.

I have seen a couple of tv shows where apple pie is served with cheese (cheddar on the shows I have seen). I saw that Colby jack and Velveeta was also mentioned. I am curious about whether any of you use an aged cheddar, or mild, medium, or sharp cheddar. I got into eating apples and cheese together and the combo is fantastic. I typically will get opal and honecrisp apples and medium Tillamook cheddar and it is great. It is also a good combination with green seedless grapes. I've even got my niece and nephew asking for a small spread of those things I mentioned (along with summer sausage slices) for the snacks when we watch movies together and they love it.... more than candy even.

You did a great job. I love baking. One Christmas, my mom gave me a beautiful marble rolling pin. My sister commented to me afterwards that I didn't look too excited about the gift. I told her that was because I never made any recipe that called for rolling ..... I'm no good at it! 😁. You're braver than I! It looked yummy!

TIP: I have found that Crisco Shortening is the best for foolproof pie crust. The recipe is on the can (or get recipe online if you can't get Crisco there. Comes in butter flavor too). Best tool is a pastry cutter mixing/cutting half the shortening in until like rough sand and the second half until like peas. This creates the nice flaky crust every time. I use that crust also for my Beef Wellington too. Another big help is to cover the edges with aluminum foil to prevent burning. Leftover pastry can be trimmed into leaves, hearts or other shapes to decorate your pies. Just attach your designs to the pie using a little milk as 'glue'. *Note: your dough was to dry to roll out properly. It will get better the more you make it though. "Practice makes perfect" my mom and grama used to say!

Make mine in the food processor with half butter, half shortening. One makes it flakey, and the other makes it short (crumbly and tender.)

Cherry pie typically has lattice crust. Apple pie usually has fully covred crust on top. .

Yep. The only time it doesn't come out messy is when you have special items to make it easier. For example, there's a cutter that lets you get perfectly even slices. Then there are the pans that the bottom lifts up away from the sides so you can easily get your serving wedge under the slice. Otherwise, it's always a mess. 😅👍

I'm not a fan of using green apples, they are a bit bitter and too firm, and making crust from scratch is hard so great job 👍. I've always use Courtland apples or Macintosh 🍎 . And I've always just used apples, sugar, cinnamon a few thin slices of butter and pinches of brown sugar. I think the nutmeg and all spice are too strong for my liking
