Hello H Family! I think I know the reason why this came out kind of chunky and separate. Rather than type it all out, I'm going to recommend a KZbin Short by a channel called "emilyslatest". If you go to her Shorts tab, the title is "Christmas Crack With Pretzels". If you sort by "oldest" or "popular" it's the first one that will show at the top. I know it's the same process as using the saltine crackers, where you lay them out evenly in one layer, etc. Hope this helps!! 😊🤩

With brown sugar you absolutely should PACK IT. Reason being brown sugar is very dense and can clump together and if you don't PACK IT IN there will be pockets of air where there should be sugar. And because of these pockets of air your not getting as much brown sugar as the recipe calls for.

The only issue is you let it boil, never let it boil. once it's nice and smooth, usually with medium heat, reduce heat to keep it saucy, then add the pretzels (usually better if they're broken, or as pretzel sticks, typically set out on the sheet pan, then you pour the "toffee" over it and spread, which is why we usually use crackers. Easier to spread over). Chill the "toffee and pretzels" while melting chocolate, then spread the chocolate over top. Then you chill it again, then crack the bars off with a mallet or something (don't get too crazy). XD And instead of chocolate chips, sprinkles are a good option over top of the chocolate. The dish is usually used for families or parties, kinda little seasonal snacker.

We usually use saltines. Line a tray with them, pour the toffee over, sprinkle liberally with semi-sweet chocolate chips, then pop it in the oven for a few minutes at 300F or so to soften the chocolate so it's easy to spread. Cool it for a few hours in the 'fridge, then break it apart. Once it's in manageable pieces, you can serve it at room temperature. The trick is the toffee - you really need to be patient with it. We stir constantly while it's heating. Once it reaches a boil, we turn down the heat to a simmer but still stir constantly for another five minutes.

When you put the cooler vanilla into the hot mixture that is what caused it to bubble up that is why you need a deep pan so it doesn’t bubble over the edge

If you have an old fashioned candy thermometer it has temperature marks such as soft crack and hard crack plus others for the different types of candy you make.

Save the pretzels and peanuts for Chex mix! I have only made this with saltines, and my toffee was definitely more liquid when I poured it over the crackers. I usually top with a sprinkle of crushed pecans. And I was taught that specifically brown sugar should be firmly pressed in the measuring cup and then leveled, but never to pack flour, just level it. Here are a couple of tips: Leave the pretzels on the parchment covered tray and pour the toffee over the pretzels and smooth if necessary After you sprinkle the chocolate chips on top, cover with tin foil. This will help the chips melt faster and more evenly.

And watch your heat I think you ended up letting it get too hot and you I believe stop stirring during the waiting period you continue to stir don't ever stop stirring

When it bubbles like that(dont worry its supposed to) you have to stir it hard and fast. Dont stop stirring until it calms down and smooths out. Its very common in candy making.

Just made this yesterday. My takeaways. Pour the toffee in a sheet pan added the pretzels and chocolate chips. Put in the oven to melt the chocolate chips. Don’t bother spreading. But use something greased on the bottom to “press” the chocolate and pretzels into the toffee. Another thing you can add is chocolate chips then sprinkle with coconut over everything. Put in the oven to toast the coconut.

❤Christmas Crack! I think you should have taken the toffee off of the heat before adding the vanilla because of the alcohol in the vanilla. I never use vanilla in mine and I always use Ghirardelli semi sweet chips. I also poor the toffee over the crackers or pretzels instead of combining them into the pot of toffee hot on the stove top. The first time is always an experiment. Crack on with your Christmas Crack until you find your favorite combo and toppings🎄Merry Christmas

She did take it off the heat before adding the vanilla. Her problem was adding the vanilla and pretzel into it and stirring it Until it started to thicken. You should add the vanilla at the beginning. Not after. Adding the room temp vanills snd pretzel made it set before the toffee was ready. She should've laid the pretzel on the cookie sheet. Then pour the toffee over top. Also crackers would've been better. Or less pretzel. At least.

I make several versions of Christmas crack. I typically use saltines, cook toffee on stove, pour over crackers, pop in oven for about 5 minutes at 450. Top with chocolate chips and chopped pecans. You can use any topping...peanuts, m&ms, crushed candy canes, etc. It's called crack because that's what you do to break it apart...crack it.

My son makes his with saltines and m&ms. And I think in the oven. Part of the fun is to smash up that giant bar into bite-sized pieces and store them in a jar with a tight fitting lid. The challenge is, to leave the lid on and keep your mitts from scarfing it all down in a rush. I also think my son used milk chocolate. There are hundreds of ways to make it - different combos, etc. Keep trying for your favorite!

Few suggestions. (1) Use Nestle semi-sweet chocolate chips for better flavor. (2) Measure vanilla into small bowl & place near stove so it warms up a bit. (3) Add vanilla while butter is still melting so it doesn't lower temperature so much. (4) When adding vanilla stir rapidly to avoid separation. (5) Place pretzels or candies on cookie sheet & pour liquid over them which will allows liquid to maintain temperature until it hits cool cookie sheet.

She is in England. I doubt if Nestle chocolate ,dark,semi sweet, milk chocolate or white chocolate chips are easy to find. Everyones ' taste buds are different For me if I use saltines I use milk chocolate with a drizzle of peanut butter, club crackers semi sweet , and Ritz or any buttery round I like semi sweet with heavy drizzle of white chocolate

Yes, vanilla in caramel will pop and foam. Nothing wrong with that. Soda makes caramel foam and expand, as well, so you have to consider the size of the pan allowing for growthif your recipe requires soda. Pack your brown sugar.

It looked good for a first attempt. add the vanilla at the same time as the sugar as you dropped the temperature too fast when you added it in or gently warm your vanilla prior to adding it. don't let what you are stirring with touch the bottom of the pan as that introduces heat spikes and can cause separation. As others said always pack the brown sugar.

I've seen this made with saltine crackers and Ritz crackers. The caramel/toffee part is tough to get just right. Mine always turned out a bit runny and things never did crisp up, but it was edible but I don't remember ever putting vanilla into it. As to good chocolate chips for candies and baking - America's Test Kitchen just put up a video this last week about 'best chocolate chips' which might give you some brands to be on the lookout for.

Canadian here, thank you for asking, people forget us:) I make this every Christmas. So good and easy. I've only made it where you put the Saltines down, make the caramel, pour on top, sprinkle with chocolate chips, put in oven, take out spread and add toppings. Put the vanilla in when butters still melting or it separates:) I use milk choc chips, and and top with red and green smarties and chopped pretzels after. I freeze it and we eat it all holiday season. Merry Christmas! (Try the Saltines way:)

You can use a number of different crunchy things. I've used saltines, Graham crackers and Ritz crackers (not all at once). I prefer the saltines. I recommend making the version that goes in oven. Not sure what happened with your vanilla.

If you looked closely the splitting was happening before the salt was added but it really started to show as she stirred it then added the vanilla as well. I think it was a too high a heat issue during the cooking. There is a learning curve with toffee where you find a time to turn the heat down once boiling for a slower rise to the optimal heat while still stirring. This is not often mentioned and is often learned through experience. It took me ages to figure it out.

It is better to put the pretzels on bottom in flat layer. Pour the toffee over the top then the chocolate chips when the chips soften spread the chocolate.

i read stovetop: use medium-high heat. Add the butter and brown sugar and whisk (use a stainless steel wire whisk) until they’re melted together. Once melted, bring the mixture to a boil, and continue whisking as it begins to thicken. This will take about 3-4 minutes. Once thickened, turn off the heat and then stir in the vanilla. Immediately pour over the pretzel pieces. Be sure to remove from the stove and pour as soon as the vanilla has been added. Letting it sit on the hot stove any longer may result in burnt sugar.

Merry Christmas!! I agree with another comment in that adding the pretzels cooled down the toffee too soon which is why it didn't stay silky smooth. Lay the pretzels out on the baking sheet, stir in the vanilla and then immediately pour over the pretzels. Sprinkling the chips at that point should also help melt them but also since you didn't like that chocolate, you could also grate your favorite chocolate and sprinkle that over...just a thought.

I use saltine soda crackers as a base layer. Something seemed off with your caramel sauce - it looked sandy or clumpy. I always pop it in the oven after putting on the chips for a couple of minutes so that it really melts - you can really smooth it nicely. After it cools - crack or break it up randomly and store in a container, not necessary to keep in the fridge unless it’s really warm in your house! I hope you try the soda cracker version, I like it better & it breaks apart better IMO.

Yeah it's crack because it's addictive. If you make it in the oven it's perfect everytime. I also use a really good quality dark chocolate like Ghirardelli or Scharfenberger at least 60% because the toffee is so sweet.

When you add the vanilla, have it pre measured, so that you can put it in with one hand and stir it in vigorously with the other hand before it starts to bubble over. Try making peanut butter toffee with peanuts mixed in, then spread a chocolate that you like on top.

I'm sure your recipe was good, but not traditional Christmas crack. You even put in parentheses (Saltine Toffee Bark). That's because traditionally, it's made with a layer of Saltine crackers first, then pour the toffee over, (it'll soak into the crackers), then topped with a layer of chocolate chips and smooth when soft. Definitely use a chocolate you like - it doesn't matter if it's milk, dark, or even white chocolate. That's the basic bark and it's good as is, but many like to top it then with their favorite toppings, such as; broken up candy canes, pretzel bits, nuts, Reese's pieces, etc. (while still warm so it sets into the chocolate). Then refrigerate to cool.

I don't know if you have graham crackers over there, but that's what my recipe uses and it's sooooooo good. I don't use vanilla at all in mine....just butter and brown sugar for the toffee. After it's boiled, I pour it over a baking sheet lined with graham crackers. Then put it in the over for 5 minutes. Then spread whatever chocolate you prefer and then top it with crushed m&m's. It's to die for!

When it comes to toffee you must work really fast. If it starts to cool too quickly it can get grainy. Candy takes practice. You did great.

Usually my toffee recipes include baking soda, not salt. It makes a difference in the chemical reaction that hardens the toffee. And adding salt to the toffee when you're already using salty pretzels it seems like too much if it's just for flavor.

Yes, any time I’ve made some kind of toffee there’s always baking soda involved. And you need to stir CONSTANTLY while adding the vanilla and baking soda, so have it pre-measured next time so you don’t leave it for several seconds like this time. Also second everyone saying saltine crackers are better (if you guys have those in the UK), and also to bake in the oven several minutes before adding chocolate.

It's a lot like Chocolate Spoonoodkes. It has chocolate chips, butter, and chow mein noodles. Dropped by spoonfuls and put in the fridge. They are served as a choice with Christmas Cookies and hot chocolate, spiced cider, or cranberry punch. Sometimes after a children's program or even at the Nutcracker Ballet in the lobby or before Santa arrives at a tree lighting ....the list goes on and on.

the point of a Christmas crack is to get the sugar to what's called a hard crack stage (310F or 155C) so that when it cools it becomes a hard candy. you don't use butter of vanilla or any other flavorings when making hard crack sugar as it has a high potential of ruining it. putting the whole tray into a warm oven for a few minutes after adding the chocolate chips helps melt them faster and more evenly for a better time spreading it. I've never seen this done with pretzels before but I can tell you from experience it's amazing for a cheap, delicious treat when done right and with saltines.

You should lay the pretzels flat on parchment paper in your pan and pour the toffee mixture over the pretzels, then put the chocolate chips over. If the chocolate chips don’t melt good you can put in oven for 5 minutes on 350 degrees, that will melt the chips good then spread then refrigerate

Yesterday I made peanut butter fudge, Christmas crack, fudge cookies, spiced walnuts and divinity. That's in addition to the jelly nougat, spiced pecans and chocolate fudge I made a couple of days ago. Would have made cookies but my oven died just after Thanksgiving. It's Christmas time! We make “Christmas Crack” for Passover with matzo! I had been making that with my grandma as a little girl long before I discovered Christmas Crack but I have a feeling some newspaper or morning show simplified English Toffee sometime in the 90s or perhaps the 80s with saltines and simultaneously Jews went “omg that will make matzo more tolerable and give a nice snack or dessert for Pesach!” And non-Jews decided to experiment further with very American variations so it doesn’t really represent an Americanized English toffee anymore. Either way it’s a delicious treat whenever you eat it! My friends usually put broken candy canes on their’s that they’ve bribed me with for my latke recipe.

You can always tell them it's called Christmas Crack because you crack pieces off of it to eat it! Also, my personal opinion - I would use dark chocolate chips in this recipe. Semi-sweet chocolate has more sugar and less cocoa solids than dark chocolate, and this recipe already has a ton of sugar in the toffee so I would use dark chocolate to get a deeper, richer cocoa taste.

It looks like your toffee “broke” just a bit. Sometimes from over stirring or letting the mixture boil before the sugar is completely dissolved into the butter. Could be from uneven heating. I always remove from heat before adding vanilla. I’ve had my toffee break as well. Looks good just the same.
