Which is very funny because if you go and watch the first ever episode of Gordon Ramsay's Kitchen Nightmares, which is back in the UK, it's called Bonaparte's and the Head chef there is 21 and trying to do fine dining in a countryside town and no ones buying it. Gordon asks the two chefs there to make him an omelette, and they fuck it up. I think he needs to take his own advice, he's lost it. Kimchi in a grilled cheese sandwich is the sort of shit he'd have never let a chef forget for a full episode of KN.

It's funny because everyone knows how amazing Gordon is as a chef. Everyone also knows that this is a garbage sandwich from hell. It would have been better if he just sliced the bread and ate it with a thin slice of the cheese on top using the bread as a substitute cracker. Those are both premium ingredients with their own flavor profiles that only get fucked up by changing them. Shit, eat the cheese by itself and the bread by itself and it would have been a better meal. Icarus flew too close to the sun on this one.

@@langa77777 Honestly, watching gordon screw this up gave me a lot of hope as I am my own chef. Sometimes I do stuff like this just to see what it tastes like. It was kind of nice watching a world-renowned expert basically do the same crap I do: all of this left over crap in my fridge tastes good by itself, what would happen if I tried to mix all of it together? Usually, it is not good. But hey, I learn something! On that same token, Sam the Cooking Guy is probably my all time favorite "normal person" chef. Not only did he get sassy as hell with Kathie Lee Gifford, he also showed the best way to make omelettes when you're high as hell: just tear up the everything pizza you ordered on 4/20 and toss it into egg batter the next morning.

Tasmanian cheese on toast (from a Tasmanian): Take bog standard white toast bread slices, put under grill until brown. Take out of grill, butter raw side and put on a slice of cheese (be fancy, use Tasty cheese!) put back under grill. Melt cheese to desired level of brown. Slice, put on plate. Eat. Be a devil and put tomato sauce on it if you want, you only live once.

Uncle Roger is right, the thickness here matter a lot. The thinner the bread the easier it is to melt cheese before outside will get burnt. Actually thickness is square growth you need in time to cook. So if normal 1cm toast take 2 minutes to grill. It will take 4 minutes to grill 2cm thick one. (Its example not valid cooking time) - As in video Outside will be long burnt before cheese melts.

@@moondrop521 after rewatching all his shows recently it seems like he does respect cultures and their cuisines quite a lot. Its just that he tries to make them „fancy restaurant” worthy. So the dish will be unique enough, yet sticking to its roots. Thats what people going to Michelin star restaurants want. Its a hit or miss honestly. Its just that some dishes thrive due to their simplicity and making them more complicated is pointless.

In the case of grilled cheese, the melted cheese is one of the things you want. So even if you upgrade the cheese, you should still select something (e.g. Gouda) that melts easily. Asiago doesn't. And so on.

One thing uncle roger missed mentioning was, if you butter your buns, no need to add any oil to pan, also in this case too much oil was added and also if you put anything other than cheese between bread it becomes some kind of sandwich, this is not grilled cheese

I agree with everything besides the push ice to melt part, that's how ice-skating works. The center on an iceskate is about pressure and when applied it melts creating a bead of water.

it's not very traditional, but kimchi is pretty good on a grilled cheese. though i guess that turns it into a "kimchi melt" but whatever. the acidity goes well with the fatty cheese, same concept as pairing it with tomato soup. also i think his real problem here was just the fireplace being waaay too hot. the other problems like the thickness and cheese choice made it worse, but if he had done it real low and slow it might have worked out.

I'm completely with Uncle Roger here. You can make gourmet versions of grilled cheese but there are still rules. 1) low, controlled, even heat in the pan. Do not use a fireplace, bonfire, etc.. 2) soft bread that isn't cut thick and soft cheese that is also thinly sliced. 3) consider the harmony of your flavors - turkey & Swiss, ham & munster, apple slices (sliced thin) & brie. Nothing about dry Italian cheese and kimchi makes me think they'll go well together. I suspect a very disharmonious mix of overly salty and overly sour flavor, in a sandwich that's unevenly cooked, burnt in parts, and just a mess all around.

As a kid I used fancy European bread thinly sliced, because it was cheaper than regular bread. Salted butter on the outside, then bread, then mustard, then slices of Edam, butter cheese, Gouda, than slices of pickles, than cheese, mustard and buttered bread. When dad made it in our garden, he used the iron skillet on the grill and put more butter into the skillet. It was the best snack to finish a bbq for us kids (this was in the 1980s). But I never ever has had the idea to use kimchi.

For people who have trouble melting the cheese before bread gets burnt, grating helps and you can place the cheese sandwich so that it touches the side of the pan and cover the pan. The heat from the side of the pan will help to melt the cheese before the bread gets burnt. If you still have trouble melting the cheese before bread gets burnt, you can also flip the sandwich more frequently. If you still have trouble melting the cheese in time, then the pan might be too hot.

If you're going to use a dry aged cheese, you need to mix it with a younger smoother melting cheese. In fact, you should use a food processor to blitz it into a paste and spread it on the bread. Softer bread, obviously as hard is going to make it harder to press. I often mix spicy mustard or hot sauce into the butter to spread on the outside for a tangy or hot accent, but that's usually with the mild American cheese to give the sandwich some bite.
