Pailin is a trained chef and a former teacher, hence why she explains things so thoroughly that you have no questions left at the end of her videos. She is the reason I know how to cook Thai food and why I grow Thai ingredients in my garden. Canada is lucky to have her here.

Pailin is the most authenthic English-speaking Thai cooking channel you can get on KZbin because she's native Thai and a trained chef. Her Thai cooking tips and advices are also very good even for myself who is a Thai living in Thailand. I especially like it when she reccommend alternative ingredients for some particular dishes since it can be difficult for people living abroad to find the exact same ingrendients for the recipe. This is valuable not only to foreigners but also Thai people living abroad because her recommendations still stay true to the overall essence of that dish even if the ingredients are not the same, thanks to her chef background. I wish that I found her ten years ago when I was a high school exchange student in the US. Even though I could cook, it was still very challenging as I was living in a very small town and did not have access to the same ingredients as in Thailand. It was also very difficult when I didn't know what would be a good alternatives as I was trying to recreate the same flavour that I grew up with in order to cure my homesickness. So, yes Pailin is a GOAT and a gem in authenthic Thai cooking on KZbin. I highly recommend.

Pailin's one of my favorite cooking channels. She even has guides on how to shop for ingredients. She is married, though (sorry, Uncle Roger) but doesn't cook with her wedding ring on, because she knows you shouldn't do that! Definitely a true auntie.

@@emancebo13 People do it to make sure their hands are clean while cooking. Bacteria can stow away under a ring, where it won’t be washed away because the skin under the ring doesn’t get cleaned. This increases the chance of food-borne illnesses spreading.

I'm a westerner but I love thai food and Pailin is really the best to teach us that cuisine. She stays always simple, adapt the receipes to the ingredients that we can find outside Thailand, and adapt it to basic home kitchen capacities. Some famous chefs believe that cuisine is technical art, while the real diamond is Pailin : the capacity to transmit passion.

@@AllanTidgwell Agreed. There are one or two exceptions, but not many (and I've never had a great Pad Thai outside of Thailand). The reality is that Thai food is really time consuming to make and most places don't want to put in that time (particularly since most people wouldn't recognize the difference). But yes, Thai food just hits all the right buttons: heat, sourness, umami, crunch, richness (sometimes)... Hmmm I'm hungry.

@@AllanTidgwell Many SE Asian abroad who came there due to wars and conflicts in their land during the '60-'90 open their retos and add their "Thai" dishes in the menus and in their names. If you ask why the restos do that? It's marketing and it's OK. You don't have to be local to cook any specific cuisine. Problem is that more than 90% of them don't know about Thai cuisine at all. They don't know how to cook -- technics, the property of ingredients, the character of the dishes, etc. They just think to put this, those, and that Thai used is Thai (think of the big name chef who cook green curry. That's it. Only his whatever-Thai-version, not just green curry, are worst) That's one reason why so-called Thai restos abroad are not that good yet I hardly see anyone stated that -- may be because they could not figure out which country the chefs are from because for them they are just all SE Asian, so a resto with the name Thai means all are made by Thai who familiar and know how to cook their own dishes. Here's a note: see if the name of the resto is "xxx (xxx is other cuisine and the ethnic of the owner)-Thai" resto. If so, high chance that it's made by people who don't understand Thai food. Those who understand about the cuisine esp. the central, Thai people or not doesn't matter, usually use only "Thai". Other than that they would state their specific eg. north, south, or northeast in their names. You can do your own observation and see if my words are true.

As a fan of Pailin, I've been watching her videos for a very long time, and it's no surprise that she is extremely good at what she does. She's a classically trained chef and, as someone who grew up in Thailand, obviously, she has extensive knowledge when it comes to cooking authentic Thai cuisine. I especially find her videos where she conducts taste tests and reviews for a variety of products and ingredients in the market, such as different brands of curry pastes, fish sauces, and even store-bough Pad Thai, to be very educational and also helpful to home cooks, such as myself, who want to cook authentic Thai food. You should definitely give those videos a watch as well! 😃

Auntie Pai taught me everything I know about Thai cooking! My husband is half Thai, and as a white girl who grew up on tuna hotdish, the prospect of attempting Thai dishes terrified me. Hubby's mom was a cook. But he was very supportive and encouraging, and loves it when I cook dishes from Hot Thai Kitchen. I'm delighted to see Pai getting her due here!

Pailin is beyond awesome and I have followed her for years. I always thought her vocalizations like "wheee!" as she narrated were fun. BTW - she is married with a young son, so calm down Uncle Roger....lol. Also - this is one of several vids she has done on Pad Thai and this was was focused on speed - having it plated within 5 minutes so, and that is why she focuses so much on the prep work. Glad you gave her some love in this video. She has a wonderful channel and a lot of devoted subscribers. So - if you review her again, be nice. We love Pailin.

I LOVE PAILIN! I’ve been watching my her since I was like 16, because I wanted to make traditional Thai food at home (after going to a small, traditional Thai place near my house) any time I craved it. I remember PailinsKitchen/HotThaiKitchen and Cooking with Dog recipes during my late teens to earlier 20s when I was exploring cooking, especially around 2014 while doing university. Coming back to their videos now being an avid cook of multiple cultural foods, especially during the pandemic of 2020, Pailin’s Pad Thai videos came back to mind. Maangchi is another OG KZbinr/Cook that I’ve discovered a few years ago. Amazing how KZbin can provide free information for the world to see. It’s the same with podcasts too! So grateful for these Aunties

I'm surprised it took you this long to give Pailin a shout-out, but I'm super stoked you finally did it! 👏You've referenced some of her clips quite a few times in a handful of your videos, and I thought, "Man, it would be awesome if he did a collaboration with Pailin to drive more subs her way." I've followed her channel for many years, and she is my go-to chef for Thai recipes. She helped me discover what I was missing when I tried to recreate boat noodles (ก๋วยเตี๋ยวเรือ) that my mother always made when I was growing up. I was very young when she passed, but thanks to Pailin, I've been able to make a lot of dishes from my childhood. Very easy to follow, well-spoken, and very fun to watch. And obviously an amazing chef. Please do more with her videos... sorry.. weejio! Would love to see her support grow even more with your massive fan base. She's got 2M subs, but heh, help Pailin race you to 10M!

I love Pailin’s videos so much. She knows that not everyone has access to all proper Thai ingredients so she will also give you options that are easier. She also made Res Curry Pork Tacos. She went to a store most westerners can find (at least in Canada) and made a recipe that everyone can make easily. I make them all the time

A friend of mine shared Auntie Pailin's videos with me a long time ago, her techniques have taught me a great deal. I believe that she was the first cooking youtuber that I heard say that you shouldn't rely on just sight, smell, and taste when cooking, but also touch and sound. This in itself has made me a better cook. These days, the appreciation for what I have learned from her and others in her class is felt every time I cook and eat a meal. It's almost always good, and it's thanks to people like her - and Uncle Roger ❤

Pailin is fantastic and her step-by-step tutorials are always foolproof (like Unc Roge said, I love that she cooks in real time)! I'm from Ireland so can't claim to know much about 'authentic' Thai cooking, but she really helped to de-mystify Asian flavours and ingredients that I'd never used before (despite being a relatively experienced home cook) and gave me the confidence to try recipes that I wanted to make but was too intimidated by. Her recipes never fail to impress whether I use them for quick weeknight family meals, hosting friends or having larger dinner parties! My all time favourite recipe of hers is for laksa - it's an oldie but a goodie! As an aside, I've had a basic subscription to her Patreon for a few years and she's always been very accessible and quick to reply to any questions I've asked about her recipes or cooking in general, so I'd gladly recommend that to anyone who's considered subscribing to it. She's a very nice lady as well as being a very talented cook/KZbinr!

I like how shes cooking in real time and has a timer up for how long its been. One thing about cooking tutorials i dont like is i never know how long i should be doing something. How long before i put something in. What it should be looking like at a certain stage of cooking. I like this style of video

Super glad to see Pailin get the extra attention here. I only found her channel in the last couples months, but her recipes are fantastic. Made nothing but red curries based off her recipe for my weekly meal prep for a month straight.

It is nice to see her get a recongnition from you. I started following Pailin when I moved to Canada a few years ago, and as a Thai who rarely cook in my 30+ years in Thailand, I am now enjoy cooking so much !

Hot Thai Kitchen is one of my favourites to watch! Pallin is so much fun to watch and she does give quite a few details about the recipes, sometimes the origins and corrections. She even did a video once about pronunciation. Btw, she is married. I think it’s been something like 15yrs or more.

Her video about pronunciation is terrific! It is so helpful to understand why Thai words are transliterated so variably. It's a really interesting one (especially for someone who loves languages but doesn't know any Thai).

I am so happy to have found Pailin, on Hot Thai Kitchen, back when filming was out of Adam's apartment (he's the camera guy). The "wheeeee" is part of her signature, sort of like Uncle Roger's haiya. I learned so much from her, including different styles of Thai cooking and how a dish came to be. Another great Thai cooking channel to follow is Marion's Kitchen.... Yummy!!

You should definitely cover more of Pailin's videos; Thai food is some of the best food in existence, especially when it's done correctly! She does an excellent job and I love cooking her Pad See Ew recipe with rice vermicelli noodles; got the gist of the recipe and use feeling whenever possible. 😄 Also, watching her videos makes me feel at least 5x better all around. Fuiyoh Pailin!

I could have told you that Pailin was worthy of Aunty status. I've been following her channel for years now. She's always top notch. I use a couple of her recipes which is impressive when you consider I have been cooking Asian food for 40+ years, with several years of that while managing a Vietnamese restaurant.

I love learning Thai cooking from Pailin. She is a great cook and a great explainer and a fabulous babe :). I have wowed my relatives by whipping up this 5-minute absolutely authentic Pad Thai for them (with mango and sticky rice to follow). Her videos and cookbooks are making me a competent Thai cook. Not bad for a 72-year old white man in Virginia. And she even has a video on how to eat Thai food properly. No fork in mouth!

C / P is not just CUP it is Cup Per Serving, aunt Pailin, just try to remind other cooks, you may have many jars of different seasonings in Thai fridge. Note: table seasonings: sugar, dried chilly, vinegar are fine to suit your tastes.

It's nice to see a positive cooking video now and then. Also I love Pailin, I been following her awhile now. Her videos are all stellar. Would love to see more reviews of her. She deserves the good press. Souped Up Recipes is similar high quality for Chinese home cooking too. You should review her videos too next time you're burnt out on the likes of Jamie Oliver.

Yes, review more of her videos. Aside from Thai food, she occasionally does non-Thai dishes - including Filipino adobo and sinigang, Indonesian mee goreng, Vietnamese pho, and loads more. I’ve been following her for a long time and, being Filipino myself, I rely on her recipes to make Thai food.
