One of my favorite things to bake from scratch are chocolate and coconut pies. Pies the way my Mama used to make. I have never use coconut milk in the filling, only regular milk. I bet that is very good. Other that using coconut milk your recipe is a lot like how I make my coconut pies. I use a full cup of granulated sugar and 3 Tbsp. of corn starch. I would like to try toasting the coconut. I have never tried that either. Thanks for this video. It is a pleasure to watch you do things.

Lori that pie look,s out of this word . Here in the UK coconut cake,s are very popular , but this is the first coconut meringue pie , I’ve ever seen made , your custard with six egg yolks I bet is the best , tasting custard ever . Then to sprinkle coconut on top , well that just made your meringue look Royal , very posh looking indeed . Be proud of your work Lori . Ms Lori, this came up on my feed after watching Collard Valley Cook's --tammy--coconut cream pie. I love your idea of barely browning the coconut. I don't like it browned, and that you use coconut milk instead of canned milk. But please go to her site to see how she makes her custards in the microwave--6 min., no standing over the pot and no scorching. There is a process, but easy, easy. Wish I had known about it when I cooked for my growing family. I used to cook a little corn starch and water to add to my meringue, but Tammy had a viewer suggest she add 2 tsp.cornstarch to her sugar and cream of tarter. She said it would be her go to recipe from then on. It works for Tammy because she bakes her meringues for 20 min at 350 for safety sake. So, next time I make a coconut cream pie, I'll use your ingredients, pre bake my coconut just a little like you do, but microwave my pudding. One of these days, I'll send you my easy recipe for masaman curry. But dont tell your son-in-law it's made with coconut milk until after he raves about it.
