I do tangerine zest and the juice but this is not the way I do mine,I cook mine in the oven with sweet potatoes patties,granulated sugar,and brown sugar cinnamon, nutmeg, butter,a pinch of salt,vanilla and the zest of the tangerine and the juice all in one pan cover and bake for 2 hours covered with foil the sugar melt slow, and bake one more hour without the foil on 350 or you can just do all the ingredients on top of the stove in liquid form first and pour it over your potatoes or patties and still bake so the favor can get in the potatoes but no water their is enough liquid in the butter

Try using condensed milk and stead of water and light brown sugar instead of white let it cook down and pour over your yams and see if you like it that way

Sweet potatoes are good for us it balance blood sugar, they’re great and high in fiber, beta-carotene is inside sweet potatoes which is great for vision, sweet potatoes are great for weight loss so many great things Very nutritious! I love homemade candied yams, and no holiday feels complete without them. They're so good for an every day side dish too, like with that delicious looking fried chicken I see over there, lol. In Hawaii, we have some really special sweet potatoes, called Molokai Sweet Potatoes. They only grow on Molokai, which is the next island over from us. They're purple skinned, with a purple flesh, and just so sweet. Hawaiians eats lots of Molokai Sweet Potatoes during the holidays.

I boil my potatoes until the water is less than halfway. Brown and white sugar. Pinch of nutmeg, cinnamon and vanilla and butter. Turn on low and simmer. Done
